The smell from fresh paint comes from VOC's, which are:

Volatile Organic Compounds

Being volatile(evaporative in nature), some take days to evaporate, others take years. Some are toxic, some are not.

You could try some of the newest low-VOC paints from Dunn-Edwards, Sherwin-Williams, Benjamin Moore and others.

But if the paint is already on the wall, get the windows and doors open and use high-powered fans to ventilate as long and as much as you can. Then install a 3M Allergen or Ultra-Pure filter in your main air handler. You could even get the Ionic Breeze room filter from Sharper Image or its equivalent at Wal-Mart etc. to capture the microscopic particles.

The average pollution inside many homes far exceeds the pollution outdoors. I live in central Phoenix where pollution advisories are common. I used low-VOC paints and have two ionizers in the place. When people come in, they say it smells like the countryside in here...

Can't tell you how to get rid of it after the fact, but to prevent it you can pay a little extra per can and have it scented. A friend of mine did hers with lilac scent. It worked well and stayed with the room for like 2 weeks afterwards.
Maybe to get rid of it now, keep windows and doors open, put up a fan and spray febreeze on furniture in room to help maks odor til the air blows it out.

If you are talking about getting rid of the smell from the paint itself, simply mix 1 teaspoon of real vanilla extract (not imitation) per gallon and it should work.

LEAVE WINDOWS AND DOORS OPEN! This isn't just to get rid of the smell. If you paint or put in new carpet or anything like that you should always air out your house because all of those things have toxins in them that will get in to you air circulation. If you don't air it out they will just keep recirculating.

Vanilla extract and water works like a charm. Mix in a bowl and place in the room.

i like the smell, but you have to tough it out until the paint dries

i dunno. i like that smell. i think all you can really do is ventilate the room if you are talking about paint on walls. It's too strong of a smell to try to cover up
