1. Fried egg sandwich is easy.
2. Using left overs you can always make some great omelets. We like using left over bar-b-qued tritip or steaks and adding what ever you have in the fridge. Such as tomatoes, onions, mushrooms, avocado, bell peppers, zucchini.
3. artichoke fritatta
4. egg salad
5. poached eggs on toast
Other than frying them you'll have to put a little work into it but it will be worth it.

Omlets with ham or bacon; spinach?? Just mix up about 4 eggs, add some milk (1/4 cut) and chopped onions/peppers; chop some ham or add bacon bits and spinach (fresh or frozen); butter the pan, throw in the mix. Low heat, wait until it's about 2/3 done (put the top on the pan), sprinkle a little cheese then take a spatchula and sort of split it down the middle, now flip one side over; put the top on the pan and turn off the heat. Put some more cheese on the eggs and let it sit for about 5 minutes. TA DAA!!!

Egg Drop Soup
Ingredients:
2 eggs, beaten
1/2 tbsp sesame oil
5 tbsp wood ears, soaked
2 cups (500 ml) clear stock
2 oz (50 g) hearts of Chinese cabbages
3/4 tsp salt, or to taste
2 1/2 tbsp vegetable oil or lard
1/4 tsp MSG (optional)
Directions:
1. Wash and slice the wood ears and cabbage hearts.
2. Heat 2 1/2 tbsp of the vegetable oil or lard in a wok. Add the eggs and fry until browned on both sides. Remove and cut into small pieces. Set aside. Pour the stock into the wok and add the salt, wood ears, cabbage hearts, eggs, and MSG. Bring to a boil and let boil 1 minute. Sprinkle with the 1/2 tbsp sesame oil, and serve.

yes.. ommelette... fried with anything you want..
you can boil them, then deep fry them, and coat them with sambal chilli for what we call "sambal telor" (sambal egg in malay)
You can boil them, mash them up and add your favourite chicken or parsley etc, with mayo.. egg. mayo
you can soft boil them (about 40-50% cooked), like.. cooked egg white, but still not solidified, and a runny yoke, and add dark/light soy sauce and pepper to taste and eat with dipping bread.
Just boil water. Once boiled, add a egg into a container/saucepan. Add the boiling water till it's covered the egg.. close the lid.. i think it should be ready in 3mins or so.. DO NOT BOIL/PUT THE SAUCEPAN back on the stove..
You can beat the eggs up with a little sugar and salt.. then dip the bread in to soak/coat them and pan-fry the bread... Viola.. french toast..
We also have this egg where u add sliced/chopped onion, a little mince meat(any kind). Add this to toast, then turn it over and fry on frying pan... it'll take awhile to cook the egg that has soaked through the bread, but it's really nice witlh chilli sauce / sweet chilli sauce.. it's called "roti john" or "john's bread"... an invention from singapore...
