How do you scan a paper with written words and transfer it into text?

One time i scanned one of my homework papers on my lexmark scanner and when i was messing with it on my computer the written words were changed into text that i could highlight and stuff. How can i do this again?

You have to use an Optical Character Recognition software (OCR). Usually one comes with the scanner. It reads the page, and does its best to convert the page into a text file that you can edit.
