we had the same question on TV the other day, and they did some lab testing.. apparently, even cheese is not safe if it's not originally moldy.. basically, the "bad" mold that grows on spoilt food releases toxins, and it's the toxins which make you sick.
The case is different from blue cheese, where they use a certain kind of mold (penicillin) to make them (according to the TV program). These mold are known to have no side effects and are "good" (ie, penicillin is also made from mold)...

I have cut mold off before and still eaten bread, I'm sad to admit. I'll usually go by the smell of the bread and texture. When yeast starts to mold it has a very pungit smell, just because you can't physically see the mold, it doesn't mean it isn't there. So is it safe? No, but alot of us have done it, and it won't kill ya.

no anything with mold on it is no good to eat. just because there is no mold on the whole bread doesn't mean its not contaminated.don't eat anything with mold on it. if you see a mold spot throw the loaf out.

I don't care how much is left. If its no longer soft, I refuse to eat it. I throw it out to my dogs. Yes, its safe. Look at blue cheese. People eat it all the time, and they're fine.

It depends on how you define "safe"! I would happily eat bread if I took the mould off!! It has never made me ill.... BUT I would not give it to my kids or any one who was elderly or already sick!
