He has every tool imaginable. I bought him a fire pit for his birthday a week ago, with skewers to roast marshmallows to go along with it. He likes gadgets, but this isn't my forte (like metal detectors and binoculars and compasses).

Well, Im a Dad, and I like gadgets (man toys) too. I had your same problem with my Dad until I realized I just had to get him gadgets that he wouldnt buy himself.
For instance last year I bought him an electronic rain gauge. HE LOVED IT!
As a son, I rock!
Then some time back I bought him an underwater movie camera. The kind you just dangle in the water and watch on a small screen.
Or, once I got him a pen voice recorder. I also bought him a wireless thermometer so he can tell what the temp is outside from his easy chair.
See, its just not that hard.

I found an interesting device that is a 1/4" to USB adaptor cable for hooking a musical instrument to a computer. If he has a muscial instrument, then it might be an idea.

But, I am in the same boat. I have no idea what to get mine, but I really want to find something useful for him.

Dress like a million dollars, find a professional who takes such
photos. Try to get something like a 12x18. He is your father, and
