I have been eating chicken non stop since I've been back in europe. And I swear if I eat another baked or stewed piece of chicken I'm simply gonna flip out. I'm a pretty good cook...but I'm on a tight budget and don't have the means to be going all gourmet.. So...anyone?

go to google and search for "chicken recipes" and you will find a lot of things i like the chicken casorole i think that is what its called but its good and e z to make good luck

this may sound odd, but trust me...

Kinch Ranch Casserole

2 chicken breasts cooked and diced
1 can of nacho cheese soup cooked to directions on can
1 bag of tortilla chips- plain
1 can of green chiles
1 cup shredded cheddar cheese

combine chicken, soup, and chiles together... in a deep casserole dish spread some of the chips (lightly crushed) and top with soup mixture, keep doing this until dish is full or your out of soup mixture.. top with cheese. Bake at 425 for about 30 minutes, or until firm and golden on top. Enjoy.... just remember not to add any salt, the chips have plenty. It tastes like a chicken enchilada... it's very simple and good, especially if you top it with some salsa.

Try this: pour 1 can of pickled peaches(remove pits and whole spices) over chicken in a skillet or pan. You can cook it on the stove top or in the oven(covered) until done. I serve this with rice.
also try :
4 shakes soy sauce, 1 clove of garlic (or2 pinches of powder), 2 level spoons of brown sugar, 2 pinches of ginger, salt and pepper to taste. cook same as above. to make it fancy add some lime juice before and sesame seeds after.

.Boil The chicken after it's done, let it cool off .take the skin off[trash it] separate the chicken from the bones .get two forks and shred the chicken in to shreds.. put chicken into and oiled pen fry it and add salt and pepper.this will taste good on a tortilla or some bread. or you can roll the chicken up in to corn tortillas and fry them make sure to use tooth picks so it doesn't UN roll while it's cooking, those are called tacquitos they are really good with sour cream or salsa. its cheat easy and good all you need is chicken, salt ,pepper, and bread or tortillas. i hope you try it.

If I may ask, how simple do you want it?

Try this, set a boneless, skinless chicken breast in a small dish, pour Italian dressing over chicken, cover and let sit for an hour or so.

Take breast out of dish, season with thyme and saute until done in a pan with a little olive oil.

Chicken Marsala:

Ingredients: All purpose flour, dried herbs (any), crushed pepper, chicken breasts (mallate), marsala wine (any wine-honey is fine too along with the wine)
Mix dried herbs in some flour and baste the chicken and put in a pan that already has EVOO. Then add some wine or honey. cook on both sides. eat wtih rice on the side....you can add mushroom also after they are cooked in the wine and evoo mixture.

1) make a mix of parm. cheese and mayo spread on chicken breast, sprinkle breadcrumbs, season salt put in 350 oven for 30-40 min

2) cover chicken with zesty Italian dressing let it soak for 2 days and then grill

for chicken breast
cut in to 1/2 in strips brown in frying pan or wok
with 2 tbsp of canola or olive oil
and 1 tbsp of sesame oil
salt and pepper to taste
remove from pan
with pan still hot add fresh or frozen veggies of your chose
toss and cover until well steamed
toss chicken back in and soy sauce if you like and serve
takes about 15 to 20 Min's

hon, i have a good one for you...get a whole chicken par boil it and get the meat off. put in the refrige and let it cool off. get a clear dish cassarole dish and line it with a duncin hines pie crust, line the bottem of the pan and have enogh to cover the top......then get a large pan out and cut up some carrots, onions, potatoes, a can of corn, a can of peas, and 2 stalks of celery, and boil them until slightly tender. then fill the dish and cover the top with crust.......this will fill u up.... good luck

cook pieces of chicken along with a pack of yellow rice, add chopped a chopped tomato,onion, green pepper,olives
and youve got yourself arroz con pollo

brown all ingrdients together with chicken b4 adding the rice,
