I crush one clove garlic into a heavy pan. Saute' for a minute or two. Pour one cup chicken stock, beer, or white wine over the garlic. Take two cups of grated cheese (cheddar, gouda, swiss, or a combination of any) and toss with about 2 tablespoons flour. Slowly sprinkle this flour coated cheese into the simmering liquid stirring in a "figure 8" until all cheese is melted. Serve with toasted squares of sourdough bread, rye bread, focaccia bread or whatever you like. I pour the cheese into a fondue pot and put a lit votive candle underneath....enjoy!
