I think its because the cream cheese and butter is sticky, so it's attracted to the ground.
Nope, thats a dumn answer. Good question though, i hate how it does that.

Gravity - the side bearing the butter, jam or marmalade is heavier than the other side, so it will always fall face down.

Gravity, I'd guess. The buttered side is slightly heavier, so falls first.
