This is more of a hearty soup with butternut squash. It is very good, but definitely not for those on a weight loss diet.
Chicken & Corn Chowder
INGREDIENTS:
10 bacon slices, chopped
2 tablespoons (1/4 stick) butter
3 medium onions, chopped
2 cups chopped red bell peppers (about 2 large)
1/4 cup all purpose flour
9 cups low-salt chicken broth
4 cups 1/2-inch cubes peeled seeded butternut squash (cut from one 1 3/4-pound squash)
1 1/2 pounds russet potatoes, peeled, cut into 1/2-inch cubes
1 1/2 tablespoons chopped fresh thyme
2 16-ounce bags frozen corn kernels
1 cup whipping cream
4 cups diced skinned roast chicken
2 cups chopped green onions
1/2 cup plus 2 tablespoons chopped fresh cilantro
PREPARATION:
Cook bacon in large pot over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towels to drain.
Pour off all but 1/4 cup drippings from pot. Add butter to pot; melt over medium-high heat. Add onions and 1 cup bell peppers. Sauté until onions are soft, about 10 minutes. Add flour; stir 2 minutes. Mix in broth, then squash, potatoes, and thyme; bring to boil. Reduce heat to medium-low; simmer uncovered until squash and potatoes are tender, about 12 minutes. Add corn, cream, and 1 cup bell peppers. Simmer until corn is tender, about 10 minutes. (Can be made 1 day ahead. Cool. Chill uncovered until cold, then cover and keep chilled. Bring to simmer before continuing.) Add chicken, 1 cup green onions, and 1/2 cup cilantro; simmer 5 minutes. Season with salt and pepper. Ladle chowder into bowls; sprinkle with remaining 1 cup green onions and 2 tablespoons cilantro.
Makes 10 servings.

Squash Casserole Recipe

A squash casserole with pecan or bread crumb topping, along with cheese and onions.
INGREDIENTS:
2 pounds yellow squash, cut in 3/4-inch cubes
1 cup chopped onion
1 teaspoon salt
1/4 teaspoon freshly ground pepper, or to taste
water
4 tablespoons butter
1 cup saltine crackers, crumbled
1/2 cup milk
1 cup shredded Cheddar cheese
1/2 cup pecans, finely chopped, or buttered bread crumbs
PREPARATION:
Place the squash, onion, salt, and pepper in a large saucepan. Add a small amount of water. Cover and cook the squash until tender, stirring occasionally and adding more water if necessary. Drain the squash and onions; return to the pan and stir in the butter. Taste and adjust seasonings, adding more salt and pepper to your taste.
Butter a 1 1/2-quart baking dish well. Stir the crumbled crackers into the squash mixture, and turn into the buttered casserole. Pour the milk over the squash and sprinkle with the cheese and chopped pecans or crumbs. Bake at 350°, uncovered, for 20 minutes, until the milk is absorbed and the squash casserole is bubbly. Serve hot. Serves 4 to 6.

Not sure if anyone has ever heard of this but there are Spaghetti Squash's out there and you just take the squash cut it in half and bake it and its just like a thin angel hair pasta. You add some sauce to it and some vegetables like zucchini and some mushrooms put a little parmesan and romano cheese on top and bake it for a little bit. Very good.

This receipe is out of Southern Livings Christmas edition from about 1980 or so... I have served it many times and I still get compliments, even from people who say they don't even like squash..lol
8 to 10 yellow squash diced
1 can of cream of mushroom soup
1 pkg. cream cheese softened
1/4 cup green onions sliced (reserve a few to use on top)
1 clove garlic diced fine or crushed
1/4 teaspoon black pepper
1/2 teaspoon salt (or to taste)
5 to 6 slices bacon cooked and crumbled
2 eggs beaten
1 pkg. frozen chopped spinach thawed and well drained (squeeze out ALL excess water)
1 cup colby/jack cheese shreds ( just use the Kraft kind)
in a skillet add about 2 tablespoons of olive oil and saute squash and onions and garlic until tender, remove from heat and combine soup and cream cheese, stirring until incorporated..it will be sort of lumpy, don't worry. Add spinach, bacon, salt, pepper, garlic to this mixture and stir well... let cool for a few minutes... add beaten egss slowly while stirring. You don't want this to be too warm or it will cook the eggs and you will end up with scrambled eggs..lol After all has been incorporated, pour into a 9x11 dish that has been buttered or sprayed with non stick cooking spray, top with cheese and green onion for garnish. Bake at 375 for 25 to 35 mintes, until golden brown. Let it stand for 5 minutes before serving. Makes about 6 1/2 cup servings.

Calabaza
1 T oil
2 zucchini sliced in circles.
1/4 c chopped onion
1 15oz can tomatoes squished.(or fresh tomatoes chopped)
Cheese.
Saute zucchini and onion 5 minutes in oil
add tomatoes cover cook 5 minutes med/med low.
put in a casserole dish, top with cheese, cook in oven @ 350 for 30 minutes.
