Lots of things are like that. Crinkle cut chips (fries) and crisps (chips) have greater surface area in relation to their volume than straight cut and the surface is where the flavour is tasted.
More surface= More taste.

Because cheese that needs grating is usually the hard kind. It needs exposure to air to release its aromatic qualities. By grating we expose the most surfaces of the cheese to air. That allows the cheese to accentuate its flavor and aroma. I am a Certified Executive Chef.

It is my personal opinion that shredded cheese tastes better because its not a huge hunk-a cheese attacking your taste buds. Its little bitty individual peices of cheese politely tingling your tongue.

Unless it's with a ploughman's.
It also tastes better if you leave it out of the fridge for a while before eating it, it's riper and more flavour comes through.

i like my cheese any which way but mouldy so i will have it sliced diced chopped shredded squashed mashed bashed or slashed but its definatly better done with the grater
