Red Onion Marmalade
Ingredients:
2 large red onions, thinly sliced
3 tablespoons brown sugar
3/4 cup dry red wine
3 tablespoons balsamic vinegar
Salt and black pepper to taste
Directions:
In a large saucepan, combine onions and sugar and cook over moderate heat, stirring often, until onions begin to caramelize and turn golden, 20 to 25 minutes.
Stir in wine and vinegar, increase heat to moderate high and bring to a boil. Reduce the heat to low and cook, stirring often, until most of the liquid has evaporated, about 15 minutes. Season to taste with salt and pepper. Cover and refrigerate up to 3 weeks; serve at room temperature.

Ingredients
110g/4oz butter
900g/2lb onions, thinly sliced
2 tbsp granulated sugar
salt and freshly ground black pepper
75ml/3fl oz sherry vinegar or red wine vinegar
2 tbsp grenadine syrup or crème de cassis
½ bottle red wine
To serve
mature cheddar
blue cheese
oatcakes
grainy bread
Method
1. Melt the butter in a medium pan and add the onions. Add the sugar and seasoning. Lower the heat and cover. Simmer for 20 minutes giving an occasional stir.
2. Add the vinegar, grenadine syrup and red wine. Cook, uncovered, over a low heat with more stirring as necessary until the sauce thickens and bubbles slowly. Serve with cheese, oatcakes and grainy bread.

25g Welsh butter
3 tablespoons balsamic vinegar
1 teaspoon fresh thyme
salt & pepper
Instructions! : )
Melt the butter in a saucepan, add the onions, balsamic vinegar, thyme and seasoning and stir. Cook over a gentle heat for approximately 30 minutes, leaving the lid off and stirring frequently. At the end of the cooking time the liquid should have evaporated, leaving a glossy, rich, onion marmalade.

both are roughly the same except when it comes to protein. EVERY veggies include a respectable amount of protein; fresh fruit does not.
