My favorite is an Italian Omelet. 3 eggs, add thin sliced ham, pepperoni and salami - shredded mozzarella and provolone cheese. Smother with hot marinara sauce and a little more chees on top.

My Personal Favorite Omellette recipe. 3 Eggs, Small Handfull of Chopped Smoked Sausage, 5 Tablespoons of Salsa (I use Pace Thick & Chunky), and Shredded Cheddar Cheese (Amount to you liking). Make for a good Tex-Mex Style Morning Pick-Me-Up. Enjoy

Keep it simple....
3 eggs, 1 non-stick pan and 2 slices of Kraft American Cheese
Heat the pan with a teaspoon of oil on medium heat, while it heats up whisk 3 eggs with a fork. Pour the eggs in the pan and make sure you move the pan a bit to cover the whole pan with the egg mixture. Go ahead and add salt and pepper as you like it (don't add the pepper while you whisk the eggs, this will make pepper collect in one spot.) Then turn the omelet with two spatulas by using one to detach the egg from the pan from the sides and the other to hold the omelet steady while you detach it. Then once it's detached flip it and add the two slices of cheese to half the egg. When the chesse has melted flip half the omelet close. Finally it's ready to serve.
You can use any kind of cheese you want or add other ingredients. (make sure you use two spatulas, I use one small and one big, it makes it easier to flip the omelet)

Fill the omelette with smoked salmon, softened cream cheese, capers, and red onions. I prefer the salmon the day after we smoke it-it has a nicer texture. A good tart chevre works well in this, too.

SMOKED SALMON OMELET WITH HERBS
Whisk 3 tbsp sour cream and 1 tbsp mustard in small bowl to blend. Whisk 4 lg eggs, 2 tablespoons water, 1-1/2 tsp chives and tarragon in medium bowl to blend. Season egg mixture with salt and pepper.
Melt 1 teaspoon butter in small nonstick skillet over medium-high heat. Add half of egg mixture and stir briefly. Let eggs begin to set at edges. Using spatula, lift edges and tilt pan, allowing uncooked portion to flow underneath. Cook until eggs are set but still moist, about 1 minute. Spread half of mustard mixture and half of salmon (1 oz) over half of omelet. Using spatula, fold unfilled portion over filling. Slide omelet out onto plate. Repeat with remaining butter, egg mixture and fillings to make second omelet.
2 serving

I like spinach, feta cheese and a little red onion.
I made one the other night with egg whites, avacado, cheddar cheese and hot sauce on top. Gotta have my hot sauce on eggs!

cheese, tomato, ham, and a little salsa on top. They say that if you put all your ingredients in a ziploc bag and cook it for like 8 minutes, you get a perfect omelet. I haven't tried it yet, but it sounds good to me!
