I interned at a Kindergarten class, so if they are about to start kindergarten (or just finished) the average kindergartener should know:
-how to read
-how to count by 1's, 2's, and 5's to 100
-sequences (first, then, last)
-patterns
-how a plant grows and parts of a plant (root, trunk, leaves, etc.)
-letters and their sounds
-whether things sink or float
-sentence basics
-some spelling (the, and, an, he, she, etc.)
-manners (like you said...when to talk and when not to, etc.)
-sorting
-addition and subtraction of single digits
-fractions (whole, half, and fourths)
-planets and their order
-the pledge of alegence and your state pledge (if you have one)
-there is more, but i can't remember everything

At five you should know happiness, love, trust and have good rolemodels. Thats enough for a five year old to have going on. Plenty more to grasp when you get older.

I just had my almost 5 year old to school yesterday for her kindergarten evaluation.
All uppercase letters. Most lowercase.
How to arrange number cards that are mixed up in the right order
How to count objects
Address
Phone number
Birthday
That should get you started. I forget the rest!

It all depends. Different children learn at different speeds and levels. My two year old knows almost as much as his 4 year old cousin.

That they are loved,special and unique and they should also know where they live,not to talk to strangers,how to phone the emergency services and what to do if they get lost,eg ask a policeman for help.Lastly please and thankyou etc.
