I would like to remain active and my right knee is down for the count. What kinds of activities are recommended for a retired runner who has no cartilage remaining?

Definitely swimming or even try a recumbant bike at the gym. Recumbants are at a lower plain that a standard stationary bike, and less pressure on the knee joints. Wrap the knee though if you do bike for some extra support.

I still believe though that swimming is some of the best total body exercise that you can do.

Use weights for your arms. That doesn't really have anything to do with your knee. You should focus on exercise that doesn't cause you to bend your knee. How about something like heel lifts, where you stand straight and lift up to the balls of the front of your feet. That builds your calf without bending your knee. Makes my calves big!

Bicycling will help keep your pulse about the same as when you were a runner. Swimming as the others have mentioned is good, too.

when my knee was all screwy (running injury) my dr had me swimming and doing upper body workouts.
Before you try out anything double check with a Dr that it's ok for your knee though
