ground beef is the least expensive and has the most fat. That is why it is the cheapest.
Ground chuck is a step above ground beef. It has a little less fat and costs a little more.
Ground sirloin and ground round are pretty much the same. Ground sirloin is made from sirloin steak and round made from round steak. Both have very little fat and cost more than the other ground meats.
For health reasons it is obviously better to use sirloin or round since it has less fat. They cost more, but you are getting more beef and less fat for your money.

The difference is some are fattier ( and less expensive) You'd want to use ground beef for chilli or spaghetti or something. When I'm grilling burgers I use ground Sirloin cause it's not too fatty but you need a little fat.

In general, ground round is the norm. If you want a REALLY good burger, take a 1/3 each of ground round, chuck, and sirloin - and don't remove the fat from any of it. I have a friend that is a chef, and if he's doing a formal cookout that's how he gets his meat ground...something about the different cuts complimenting each other.

The difference is in fat content. The package you pick up in the meat department of your local grocery should list the percent of fat in the contents of the package. Generally speaking, if you are concerned about fat and cholesterol in your diet, you want the leaner product. If your main concern is flavor, it has to be admitted that high-fat hamburger is more tasty than lean ground sirloin. The healthy solution is to use the leaner ground product, but either add flavor-enhancers such as A-1 sauce or other such product before grilling/frying. And after the patty is done, you can further dress it up with all the usual - pickles, tomato, ketchup, salsa, onions - I like mine this way: 1/2 pound meat patty cooked medium well with sliced mushrooms and onions, and when nearly done, topped with A-1 sauce and a slice of Swiss cheese and a couple slices of bacon. Throw a little leaf lettuce in there too and set the whole thing on a nice big sesame seed bun. Mmmmm-mm! Yummy! Jeez, there goes my cholesterol...

Ground chuck is my preference. Ratio of 80/20 beef to fat. Yummy. Also good is a mixture of ground chuck and ground sirloin. but not as juicy.

I use chuck. Ground beef has too much fat, and the burgers shrink too much. Ground sirloin and and ground round have less fat, but some fat adds to the flavor of the beef.
