Food Network is a good place to start. Chicken, like any other meat needs the flavors you want represented to be with the meat through the entire cooking process. Often marinates are useful. I like to place chicken in a plastic bag with some garlic, a little tyme and anything else which smells like it could go well together. Cumin and red chili powder can give you that deep enchilada flavor. Don't over-do anything. A little can go a long way, especially with such potent spices. If you chicken is already cooked, applying the same spices will be OK, but cooking with them lets the flavors into the meat, sort of like becoming one flavor not just several layers of flavor on the surface covering the chicken.Take off the skin if you can since removing it lets the flavors into the meat and takes of most of the calories our of the chicken. Try using corn and or corn tortillas for an authentic taste.

By far the most distinctive "Mexican" seasoning is cumin. Try experimenting with a mixture of cumin, salt, ground red pepper and black pepper.
Better yet, buy some dried whole chili peppers (ancho, guajillo, etc.), remove the stems, cut the peppers crosswise with scissors, get all the seeds out, fry them in a saucepan with diced onions until soft, add spices (above), add just enough chicken stock to cover everything and simmer it for an hour. Puree the remainder or put it through a food mill and add your cooked chicken to the resulting sauce.
Darker chilis will be milder, red chilis are hotter. Experimentation is key but you can't go wrong. Anything you make yourself is going to be better than a packet from the store!

If I were making the enchiladas...I would use red pepper flakes....coriander or cilantro....garlic and onion powders...don't forget the salt!!!! If you want to season the chicken before you cook it...just ad these seasonings and boil the chicken in water or beer...I prefer Corona. The carbonation in the beer adds an extra tenderness to the meat. Make sure that you add more seasonings if you are going to boil the chicken than if it was already cooked. If the chicken is already cooked, you can use the garlic and onion powders...if you are going to boil the chicken...I would use fresh. I hope this helps!!! Good Luck!!!

DONT USE THE PACKETS in the morning take the chicken and put in a crock pot or a reg pot on low and pour a jar of red or green enchilada suace the chicken will be perfect that night to pull apart it takes in engh flavor without too much dont use the greek seasonings like the other guy said. these are my favorite

A little bit of chili powder and a little bit of cumin. Go easy on the cumin though. If they are cream based enchiladas you can use some cilantro as well. Good luck. When's dinner? I'll be right over. :)

use any mild to med hot spices in the kitchen spice cabinet. My kids prefere their enchiladas to be made w/ onions ( diced), enchilada sauce ( a can of red and green mixed), a dash of fresh garlic, and a dash salt, and ground black pepper. One of them also adds a splash of tabasco.
i have 3 teen aged boys who love to each and cook. It works for them

Salt and pepper the chicken, then add some salsa that you like to the meat when it is almost cooked.
You can also use onions, jalepeno and bell peppers. Cumin is good, too. Use only things that you like and it will taste good to you.

Salt, pepper, onion, cumin, fresh chopped cilantro and garlic. simple is usually the best...cumin adds that mexican flavor, but isn't over powering to the chicken like chile powder.

Salsa is great and easy. You can always use your own seasonings, chili powerder, cumin, paprika, garlic, salt, pepper, etc. but the salsa or taco sause in the jar is just as good.
