Using fresh dried seaweed in a traditional Japanese salad would be delicious.
Peel a large cucumber and cut into very thin slices.
Put sliced cucumber in a bowl with some splashes of rice wine vinegar, a dash of water and a shake of sesame seeds.
Then add some of your seaweed. Chill for an hour and eat

I'd have to say the old faithful ( and un imaginative ) california rolls. You can tweek them to your tastes and the possibilities are endless!
