He loves anything that has to do with airplanes. He even has his pilot's license. He's very generous to me and my family and I'd like to acknowledge his birthday with something special.

Perhaps you might get him a subscription to the Experimental Aircraft Association, if he doesn't already have one. They meet every summer in Oshkosh WI (half a million of them or more) and it's planes planes and more planes! Call or email them. They would be happy to help you.

How about tickets to an airshow? Or if he is also a sports nut, a nascar race where he can watch the fly-over beforehand and the race following.

instead of the normal air travel aka plane, why don't you let him travel the skies in something else, a hot air balloon maybe, it's fun and it'll be something that he'll remember forever.
