With peppers I like to use ground meat (beef or turkey), tomato sauce, onion, cooked rice, cheese and spices and make stuffed peppers.

With tomatoes it depends on if you like them hot or cold. I like to take the inside of the tomato, diced onion, pepper, cucumber, cheese, spices and some diced crusty bread and stuff the tomato with that. It's light and filling.

Also with roma tomatoes this is fantastic! Hollow out the tomato and cut a small bit off the bottom of the tomato so it will stand up. Don't hollow out all the way or the filling will come out. Spoon a small amount of bread crumbs in the bottom of the tomato, a small drizzle of butter and stuff it with mozerella cheese. Top with a small amount of bread crumbs and place in a casserole dish. Before baking drizzle with a little more butter right on top of the tomatoes. Bake at 350 degrees for about 10 -15 minutes. You want the tomatoes to be wrinkley and the cheese to be melted. These are sooooo wonderful. I make them year round. And you can use the winter tomatoes even if their not as ripe as summer tomatoes. You can do the same thing with cherry tomatoes but on a much smaller scale.

For tomatoes, I like to make the following:

Boil some of that pastatina ( tiny little star shaped pasta) drain it, and while it's cooling, chop some shallot, garlic, basil, rosemary, red peppers, salt and a little pepper. You can add almost anything that sounds appealing to you, artichoke hearts, pine nuts, almonds, sunflower seeds, celery, purple onion, Add that to the pasta with a little sour cream and mayo or apple flavored horseradish and mayo. You can add shrimp, crab, lobster, chicken, or leave it just as it is. Chill the filling and then stuff em.

You can also make that yellow rice, add anything you want to that...
Wild rice works too... to it you can add sauteed mushrooms and browned drained sausage, onion and water chestnuts, onions, celery.....
The rice works well stuffed in the peppers, too.

One fun one, is grill the hollowed out tomatoes until they begin to blister but not blacken. Grill some portabella mushrooms, and onions. Stuff that in the tomato with mozzarella or Gorgonzola or chevre cheese. You can grill a piece of tuna or mahi mahi for the inside bottom of it too.

Minced beef or chicken cooked in onions, tomatoes, some green chillies (if you like them), salt, crushed red chillies and whatever spices you like. Then stuff them in the peppers and steam them or cook them how ever you prefer.

Rice with herbs, or rice with cooked ground beef is great.
Look for a recipe for gemitsa which is a stuffed tomatoe.

Rice and mozzerella with pine nuts.

Cous cous and chick peas with spring onions or chilli.

Quinoa, feta and lemon juice.

Additional top tip - tie the tops on with wet string and cook them on the barbecue.
