Its probably hot there, so why not a cool salad?? You can cajun it up if you like!
Here's a recipe for 3-4
CHICKEN SPINACH SALAD
3 bunch fresh spinach washed and dried, or cheat and get 10 pkg of the prewashed ones at the market
3 chicken- boneless breast, grilled or boiled, then diced and chilled.
2 cup dried cranberries
2 cup chopped pecans or walnuts or both.
1/2 cup sunflower seeds, or put on side
1/2 cup feta cheese
any viniagrette dressing
Mix ingredients together and add dressing right before serving. Best serve chilled. Goes great with a glass of iced tea!
MEXICAN CABBAGE SALAD
2 cabbage, finely sliced
2 avocado, ripe, peeled and diced
2 bunch cilantro/coriander, finely diced
3 large tomato diced
1/2 c diced celery
1/2 c brown onion, diced
1 fresh jalapenos, seeds removed then diced
Mayo
salt/pepper to taste

Fry up some ground beef, drain the grease out. Add a jar of salsa and bring to a boil. Top with some broken up tortilla chips and shredded cheddar. Cover and sit for about 7-10 min. Until the cheese is melted. This recipe comes from the Ortega Taco Co. website. My entire family enjoys it!

Baked Pasta w/ Sausage
serves 4-6
1/2 milk
1/2 heavy cream
1/2 cheddar cheese
1/2 mozz cheese
1/2 parmessan cheese
1 8oz bag of penne pasta
1/4 cup chopped shallots
6oz of sweet Italian sausage- diced
In a sauce pan combine mike, cream, and cheeses on low to medium heat until melted. 4-6 qt pot of salted (like the ocean) of water for pasta, bring to a boil. Cook until al dente (to the tooth). Heat a saute pan over med-high heat and cook the shallots and sausage until brown, drain the oil off.
In a large mixing bowl combine pasta, sausgae and shallots and cheese sauce, pour in a large baking dish and bake at 450 until golden brown. If you have any extra cheese, put some on top before baking.
It seems like a lot but, this dish only takes between 20 to 30 minutes from start to table. Kids love it and so do grownups.
Hope it helps

some of the things I like best on (off?) the grill: Salmon with orange glaze corn on the cob (soak 6 ears, 2 gallons of water, 1/2 cup sugar, 1/4 cup salt for 2-5 hours, partially husk, apply butter, re-wrap in husk, wrap in foil, grill until done. (it can take a little practice, 15-20 min, turning 1/4 turn every 3-5 min if I remember right)) Anaheim peppers Blue crab Lobster tails Pineapple slices Ham steaks (very good with pineapple slices) Beer can chicken (look that one up, several ways to do it.) Turkey legs (baste with emulsified butter and chicken stock for super tasty results) pork tenderloin Corned beef (Yes, you can grill it, and it has a distinct flavor, however the smell can be a bit of an off thing for some)

So glad you asked that question I was thinking the same thing. I'm going to print out these recipes myself.
I like to use chicken tenders (as many as you need to feed your family) 2 cans of cream of somthing (mushroom, broccoli, chicken) and one can of chicken and herb and cook in the crockpot on high for 2-3 hours or on low for 6-8 hours. Before serving add in some sour cream, about 4 oz. and serve over noodles or rice. I've also added broccoli to this about 30 minutes before serving and it's delicious.
