Brennan's of New Orleans Bananas Foster

1/4 cup (1/2 stick) butter
- 1 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup banana liqueur
- 4 bananas, cut in half lengthwise, then halved
- 1/4 cup dark rum
- 4 scoops vanilla ice cream


Directions:

Combine the butter, sugar, and cinnamon in a flambé pan or skillet.
Place the pan over low heat either on an alcohol burner or on top of the stove, and cook, stirring, until the sugar dissolves.
Stir in the banana liqueur, then place the bananas in the pan.
When the banana sections soften and begin to brown, carefully add the rum.
Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum.
When the flames subside, lift the bananas out of the pan and place four pieces over each portion of ice cream.
Generously spoon warm sauce over the top of the ice cream and serve immediately.


Paula Deen's Not Yo Mama's Banana Pudding

2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

This is so easy and so YUMMY!! You can also do this on the barbecue as well.

Take 1 banana per person, keep the skin ON.

Make a slit through the skin into the banana, running the whole length of the banana, but don't cut all the way though, a shallow slit should do.

Now, take 5 squares of chocolate per banana and push them into the slit so that they are half in and half out of the banana and skin.

Now wrap in foil and bake for about 15 minutes, the chocolate melts inside the banana and is delicious, you could add some rum for the adults. Any chocolate will do, this is also delicious with chocolate that has a runny caramel centre.

Banana chip cookies. My mother gave me this recipe from her mother. They are really good with a nice cold glass of milk when they are still a little warm.


1 1/2 cup flour
1 cup sugar
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
3/4 cup shortening
1 well beaten egg
1 cup (2-3) ripe bananas, well mashed
1 package Chocolate Chips (large or small, depending on how big a chocoholic you are.)

Cinnamon Sugar:

1/4 cup granulated sugar
4 teaspoons cinnamon


Preheat oven to 350 degrees.

1)Cream the egg, sugar and shortening and vanilla and bananas, until light and fluffy.
2)Stir in the baking soda and salt until well blended.
3)Next add the flour, followed by the chocolate chips.
4)Drop by spoonfuls onto lightly greased (spray coatings work well) cookie sheet. These can be either small teaspoon size, or large serving spoon size. Just watch your cooking time on the first batch to determine the exact time needed.
6) Sprinkle with cinnamon sugar mixture and bake.
6)Normal baking time is 10 minutes depending on the size.

Hummingbird Cake With Cream Cheese Frosting

INGREDIENTS:
3 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 eggs, beaten
1 1/4 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 can (8oz) crushed pineapple, well drained
1 cup chopped pecans
2 cups chopped firm ripe banana

Cream Cheese Frosting:
16 ounces cream cheese, softened
1 cup butter, room temperature
2 pounds confectioners' sugar
2 teaspoons vanilla extract
1/2 to 1 cup chopped pecans

PREPARATION:
Preheat oven to 350°. Sift flour, sugar, salt, baking soda and cinnamon together into mixing bowl several times. Add eggs and salad oil to the dry ingredients. Stir with a wooden spoon until ingredients are moistened.

Stir in vanilla, pineapple and 1 cup pecans. Stir in the bananas. Spoon the batter into 3 well-greased and floured 9-inch round cake pans. Bake for 25 to 30 minutes,or until a wooden pick or cake tester inserted in center comes out clean. Cool in pan for 10 minutes, then turn onto cooling rack. Cool completely before frosting.

Cream Cheese Frosting:
Combine cream cheese and butter; cream until smooth. Add powdered sugar, beating with an electric mixer until light and fluffy. Stir in vanilla.

Frost the tops of all 3 layers, stack and then frost sides. Sprinkle top evenly with the 1/2 to 1 cup chopped pecans.

2 cups cold water

1 pt. (2 cups) vanilla ice cream, softened

1/2 cup pineapple chunks

1/2 cup PLANTERS Chopped Pecans

1 cup thawed COOL WHIP Whipped Topping


STIR boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in cold water.

ADD ice cream; stir until well blended. Pour into serving bowl.

REFRIGERATE 3 hours or until firm. Top with fruit, pecans and whipped topping.

Banana Pudding
Serves 8

3/4 c. plus 6 tablespoons sugar
5 Tblspns. flour
2 c. milk
4 large eggs, separated
2 t. vanilla
1/4 t. cream of tartar
1 c. heavy cream
2 c. vanilla wafers
2 ripe bananas

Whisk together 3/4 c. sugar and the flour in a heavy
bottom 2- to 3-quart saucepan. Add 1/2 cup milk and
egg yolks and whisk until smooth. Add remaining
1 1/2 cups milk and blend. Cook, stirring constantly
with a wooden spoon, over low heat about 15 minutes,
or until custard is thickened. Be careful not to
overcook eggs. Transfer immediately to a bowl and
stir in vanilla. Let cool to room temperature.

Preheat oven to 350 F.

Beat egg whites in a medium-size bowl until frothy.
Add cream of tartar and beat just to soft peaks.
Gradually add remaining 6 tablespoons sugar and beat
just to stiff peaks.

Whip cream to stiff peaks in a medium-size bowl.
Gently fold whipped cream into cooled custard.

Arrange 1 cup vanilla wafers in bottom of a 2-quart
ovenproof casserole dish. Top with one sliced banana
and half of custard. Repeat with remaining 1 cup
vanilla wafers, one sliced banana and custard. Spoon
meringue on top of custard, spreading to cover entire
surface sealing well to edges.

Bake in center of oven 15 to 20 minutes until meringue
is golden brown.

Cool slightly or bring to room temperature and chill.
Serve in dessert or ice cream bowls.

Cracker Barrel Old Country Store Banana Pudding
Serving Size: 8 - 10

Notes:
This is only offered during certain times of the year. This is perfect
for a
cool refreshing dessert any time of the year.

Ingredients:
1 1/2 C. Sugar
1/2 C. + 2 Tbs. Flour
1/2 tsp. Salt
4 C. Whole Milk
5 Large Egg Yolks (beaten)
2 tsp. Vanilla
4 Tbs. Butter
1 12 oz Box Vanilla Wafers
6 - 7 Bananas (sliced about 1/3" thick)
9" x 13" Cake Pan (lightly sprayed with non stick spray)
1 Large Container Whipped Topping


Preparation:

On medium low heat in a large sauce pan place sugar, flour, salt, and milk. Stir until mixture is completely blended. When mixture begins to softly boil, cook for 2 minutes, stirring constantly. The pudding will begin to thicken. Remove from heat and add 1/2 cup of hot mixture to beaten eggs and stir until
blended. Place pudding mixture back on stove on medium heat and add egg mixture, continue cooking for 3 minutes longer. After 3 minutes turn heat off,add butter and vanilla, beat until blended. Remove from stove and let cool for about ten minutes while you prepare the pan and vanilla wafers. Spray your
pan with non stick spray and place vanilla wafers to cover the bottom and sides of baking pan. Slice bananas and cover the wafers with bananas. Pour pudding in pan, covering bananas and wafers. Place banana pudding in refrigerate until
completely cooled. When pudding has cooled and set, cover completely with whipped topping. Place plastic wrap on any leftovers and store in refrigerate.

maybe bananas over ice cream, take Grand Marnier, butter, sugar and your ripe bananas and carmelize it all togehter and put it over icre cream or as a pancake topping.

bannana pudden, or banana popsicles are very good to. dipped or not just put them on a stick with your flavors and rap and freeze. yummy
