Engine braking systems like Jake Brakes alter the engine’s four-stroke engine cycle to essentially temporarily convert the diesel engine into an air compressor, with the compressed air being released through the exhaust valves rather than igniting with a fuel mixture to push down on the piston as happens during normal accelerating operation
In this way, the engine’s energy, or rather the kinetic energy of a truck accelerating downhill, is converted into compressing air in the engine cylinders, whose energy is released explosively through the exhaust system. Unless you have a special muffler installed as is legally required in Oregon, you have "unmuffled engine brakes." And they are extremely loud and noxious to anyone in the immediate area.
Using this system, truckers can spare their traditional brakes, which could otherwise wear out quickly or even catch fire keeping 80,000-pound loads from careening uncontrolled down hills.

Engine Braking refers to when you don't press the accelerator and so slow down the car using the fact that the engine has not additional power and is slowing down, which slows down the wheels.

I am not sure what context you ask this in but engine break tests were done to to measure or test the performance of an engine. The mechanics behind this are well documented so if you want the detail it will be readily available from the WWW. Simplistically, a load is applied to the engine and its ability to resist this load without loss of performance is measured. This is where Torque and Break Horse Power measurements came from

if you meen from a road sign its refering to semis which have cylinder jake brakes that you can control by a switch.
