It may also be known as "empanada", but you can't use the dough recipe for meat fillings (dough is too flaky). This pastry calls for flour, sugar, shortening, water, salt, baking powder and maybe something else. NO eggs and only oil for coating on top before baking. Also, it involves a lot of rolling and folding of the dough while adding generous amounts of flour. Then it's filled with preserves and folded into a triangular shaped (DOES NOT use the pastry press thing) and BAKED, not fried.

Can anyone please help?

***Dough:***

6 cups Flour
1 teaspoon Salt
1 tablespoon Sugar
3/4 cup Shortening
1 1/2 cup Water
***Fruit filling:***

20 ounces Mixed dried fruit
1/2 pound Raisins
3/4 cup Sugar
1/2 teaspoon Ground cloves
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1 cup Pinon nuts(other nuts okay)
Directions:

Mix flour, salt and sugar; add shortening and mix well. Add beaten egg to water and then to dry mixture. Dough should be soft but not sticky. Make small balls of dough. Roll out to 5 inches diameter and 1/8"" thick. Place a heaping teaspoon of filling on half of rolled out dough turning other half of dough over and pressing edges together. Pinch edges between thumb and fore finger giving the dough a half-turn. Fry in deep fat until golden brown. Drain. To make fruit filling, add enough water to cover the dried fruit and raisins. Cook over low heat until tender. Add sugar, spices, and nuts. Mix until well blended. ( A 21 oz. can of fruit pie filling can be substituted for the fruit filling.)

Pasteles means cake. and about the empanada is really simple.
get the pastry that looks like a small plate and put in the middle whatever you want to put (usually I use Guava paste, and cream cheese) is really yummy. Ok fold in in the middle and it have to look like a half moon. With a fork, get all the borders and until is completed close.

put it in a tray and get it to the oven until you see it gets a nice brown color.

I make fruit-filled ones by filling store-bought flour tortillas with jam. Then I paint the edges with egg white so it seals into a burrito like shape and fry it in a frying pan. It's also really good if you coat the whole thing with egg white and sprinkle on cinnamon & sugar.

oh my I love empanadas I haven't had any for years The last were made by a lady that worked for my family in ElPaso,TX. Her name was Esperanza and she made a lemon one that was soooo good. She could really cook.
