I need to know the best baits to use?

Live minnows for the flounder. Normally you can net them in the canals on the way there.

Redfish love crabs. If you can get them alive. Hook them in the corner and take off their claws.

Stop at a roadside stand and buy FRESH SHRIMP. It is what all the locals use and is much better than the frozen ones. Even if you go on a headboat bring fresh shrimp. The small chunks of salted clams they give you don't work nearly as well.
Another bait to have is bloodworms. About the size of a nightcrawler but when you cut or hook one blood comes out. Be prepaired for a little sticker shock I think they sell for around $8 a dozen.
Artificial blood worms called fishbites bag o worms might also work.
Gotcha lures are used a lot on piers. They are about the size of a 3 /12 long pencil and are very heavy.
For launching bait off of a pier use a heavy 7-8 foot rod for throwing the 1 - 2 oz sinkers with bait.
Most people use a spreader rig also.

Cobia from a boat offshore either on a wreck or some sort of structure such as a platform or mooring buoy. Drum occasionally from surf but usually from a boat in the bays, shell reefs, dams and constricted areas where water moves during tide change. Flounder are less often caught due to being on the bottom. We gig them at night in the shallows with a strong light or Coleman lantern. Speckled trout are plentiful off piers or in surf.

You catch flounder by fishing on the bottom with live or cut bait. I prefer squid, but anchovies or sardines work well.
Redfish generally are fished using artificial lures.
Be carefull of size restrictions on both species.

tell you what i tell everyone.ask the locals.from them you will grow and gather knowledge along with your own creativety.there no other way youll see .fishing 50 yrs
