Hollandaise is the base for Bearnaise which is a classic accompaniment to fillet (or really any) steak.
May as well complete the entire sequence by including asparagus which is also a classic pairing for hollandaise sauce!

Chicken will go fine with hollandaise but if you want one specifically for steak and salmon then garlic butter never fails.

think chicken would taste ok. an easy option for salmon is spread a pit of pesto on top of a salmon steak before roasting it in the oven. then u can give your man a steak and what ever sauce/gravy he wants

Bearnaise would go well but not such a big difference to your hollandaise
Why sauces keep it simple , a little creme fraiche and herbs
or just olive oil and herbs a bit of garlic butter voila you are the star !

Try a white wine and cream sauce. delicious with both steak & fish. Try combining steak & seafood with it too. Surf 'n' Turf is to die for if done properly.

With salmon, my grandma has thie really good recipe for tartar sauce, but its not like the stuff you get in the jar. It has that red pepper powder and lemon and stuff in it. I bet marthastewart.com has a recipe for it.
