....perform my tests and then install them in a live envionment. The products are Windows 2003 Server, Exchange 2003 Server and ISA 2004 Server. All are full pack.

You can install them as long as the computers / servers you are installing them on are not needed by the network when you are installing them.

Yes, the licenses are portable --- you can move them from one server to another. Just be sure that you uninstall the licensed product from the lab environment before you install it into production. You might also check with your Microsoft account manager or the reseller that sold you the product; they can provide a 90-day evaluation license that you can apply to your lab installs, which would allow you to keep the lab and production both running for a period of time. That way you don;t need to rebuild the lab if you encounter a problem in production. You can also download evaluation copies (90-day) online but going to your TAM or your reseller would possibly mean you can renew the lab license (another 90-days free) if you need.
