Has anyone got a really scrummy recipe for pork mince?

I would like something a bit spicy but low fat as I am on a diet. The pork is lean.

In my fridge I have polenta, skimmed milk, some garlic and some cherry tomatoes, dijon mustard, a low fat strawberry cheesecake yoghurt, a lemon cheesecake yoguhrt, 1 red onion, couple of rashers of bacon, 1 courgette, some potatoes.

I have plenty of dried pasta and rice and other storecupboard ingredients, herbs, spices and baked beans, oil, tinned toms (cherry and plum) etc.

Oh I am thinking that the yoghurts may be of not much use and spaghetti is not allowed cos its too easy *grins*

off what you told me try this:

in Olive Oil if you have it or reg veg oil about a tbls or 2 sauté some garlic and onions just for about a min or two

either pound pork into a thin slice or slice the pork into strips and season to taste with seasonings of your choice and add to skillet of oil and garlic mix. Saute the pork and garlic and onions. add about a tbls of the dijion mustard to add spice and a nice tang. Eat over rice

This is a quick diet concoction. Tell me if you like it.

Fry the garlic, onion and courgette with the pork mince and bacon until the onion is nearly done(softish) and the pork is well cooked.
Put some tom( tinned ) in a pan add tea spoon of sugar to take the acidic taste of the tomatoes and cook on simmer for about 25-30 minutes add salt pepper and tarragon or basil if you have them.
boil the pasta penne if you have any or other paste of similar size.
mix to gether every thing and put in a glass dish put in the oven around 190 for great results put cheese ontop until browned.
serve with a salad with your cherry t`s

Why not try pork burgers with baked potatoes.

finely chop the onion,courgette, garlic and bacon, and saute in a little oil.
add the mince and brown.
remove from heat.
add mustard & spices and mix well.
mix in some breadcrumbs and then form into patties with floured hands.
gently cook by method of your choice.

You could make a lasagna come moussaka - using the pork mince and the courgettes and potatoes.

Fry off pork until golden with chopped onions - maybe a bit of garlic, chilli, flavour you want. add tomatoes and stir and simmer

slice potatoes and courgette very thinly and layer one of top of other meat/veg/meat veg could make a little white sauce with cornflour and nutmeg and cheese to top?

Otherwise pop in oven for I would say 40 mins on 6 - peeking at it now and again - and then BOB'S YOUR uNCLE!!!!

Now - what can I do with chicken breast, potato and spinach and rice and pasta?

Make meatballs with spicy tomato sauce, serve with either mash or pasta.
