if you looked in the Old Testament, and turned to this passage (Leviticus 17:11), you'll find that blood represents life. Throughout the Old Testament, the theme that whoever sins (even if was only in thought) must die, and all the sacrifices that were given was with the idea of finding an innocent life to die for the sinner. The blood meant that Jesus would die for all our sins (he was the innocent life), the drinking of blood meant that we accept his gift of cleansing. His giving of his body is like a burnt offering (Leviticus 1). He wholly gave his life to serving God, his father ,was without defect and was willing to do so. Another thing it represents is the Passover lamb. His Body and Blood were our Atonement offering(Exodus 11:1~12:30; Leviticus 4). Praise be to the LORD! For His undying love that he would follow through even to his death.

The symbolic meaning is 'sacrifice'. Jesus came to be the sacrifice that takes away our sins. God the Father in Heaven spoke to the Israelites and said " I do not want your sacrifices". The practice of their religion had come to something which was not sincere. Much of it was external and did not come from the heart. In the old Testament sins could not be forgiven unless a sacrifice was made and blood was spilt. This had been their tradition for ages, but we presume that they were making thier sacrifices on the Day of Atonement and then going back to their old ways without actually repenting and without showing love and forgiveness to others oitside their own religion and families.
God had to give something which would fit in with the thinking of those times. So he sent down his son to enter a human body which would be sacrificed. As his son was God it would be a PERFECT sacrifice and this would do away with the need for any further ritualistic animal sacrifices as long as we acepted, believed in and followed Jesus.

take this.. as he handed out bread/wine..the bread or flesh his essence if you will (broken and shared)..by eating it also suggests the relationship you have intimate and personal..the wine is symbolic of blood.. Jesus was wanting the disciples to create a ritual whereby the issue of remembering what I have done for you is central theme .. it establishes the grace by salvation...there is mystical overtones as well ..godflesh has been also called Eurachrist and even magic mushrooms are referred as the flesh of gods (psychedelic experience) Most Christians classify the Eucharist as a Sacrament

I think of it this way, just as we need food in order for our bodies to work and be healthy. We need the Sacrament in order to survive spiritually. The Blood and the body represent His spirit and when we partake of it we are being fed spiritually. So that we can have his spirit to be with us. Renewing our commitment to live as he would have us do. It gives us the strenght we need to endure all that we must endure while in this mortal state. He fills us with everything we need. We will never hunger as long as we have him in our lives.
