Because the story was written down by and for an ancient people - they hadn't discovered titanium yet. God making people from the earth is a real image for them that they understand. If the Bible was written today, it might use analogies like God inventing humans like we invent a fantastic new piece of electronics - unique and awesome!
By the way, I don't think that the Bible is strictly analogy - there is truth to it, but truth needs to be told to people in language and words that make sense to their time and place.

There is one ancient Christian text that says that god created man from clay and the blood of a fallen god. Now if he is the only god then where did the fallen one come from?
As to titanium? I'd prefer adamantium. Never a broken bone and me and wolverine could hang.

This was demonstrating the fact that God made us as He wanted.

Well...a clay pot will break if dropped from high altitudes without a parachute, muuuuuuch like a human. Making us out of something versatile--yet not unbreakable--is a way to remind of us our humanity and mortality. The end.
