My sister-in-law gave me this recipe. I haven't used another since.

1 lb. ground beef (the less fat, the better for health)
1/2 cup Italian-flavored bread crumbs
1/4 cup grated Parmesan cheese
1 small to medium onion, chopped small
1 8oz can tomato sauce
1 egg
Salt and pepper to taste
Ketchup

Mix all ingredients except ketchup together with fork or clean hands.

Spray an 8" x 8" baking pan with cooking spray, or oil lightly. The size of the pan is not that important as long as it's at ~least~ 8" x 8".

Pat the mixture into a loaf shape about 3" high. Cover the top with ketchup, using the back of a spoon to spread.

Bake in a preheated 350 degree oven for approximately 45 minutes to 1 hour, checking after 45 minutes.

1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

You have several good receipes for meat loaf, so I won't bother with that.

Working the ingredients into the meat with your hands will usually cause the meat to be broken down. This causes the end result to be a mealy textured and tough meatloaf. Mix the ingredients into the meat with a mixing spoon and the meatloaf will have the proper texture.

Also think about mixing some ground pork and ground beef. Makes a delicious meatloaf.

Get some ground beef or chuck, some ground lamb and some ground pork or you could use only ground or any combination of the two meats. Put in a large mixing bowl with some chopped onions, red and green peppers(bell) a couple of minced garlic gloves. About 10 saltine crackers crumbled real fine, beat two eggs a half of table spoon of chili powder salt and pepper. Mix all together and shape in a square shape. Bake at 350degrees for 45 minutes to an hour. Drain excess grease from pan. If you like you can cover with a beef gravy or a red tomato sauce.

1 lb. Hamburger
1 egg beaten
1/4 crushed crackers or breadcrumbs or cornflakes
2 tbs ketchup
1/2 onion chopped
Mix all together with clean hands
put into bread loaf pan and shape into loaf
Cook in pre-heated oven at 350 for 50-60 minutes
Right before the meatloaf is done add ketchup or BBQ sauce to top of loaf and cook another 10 minutes.

Quick and Easy Meatloaf

1 1/2 pounds lean ground beef, chuck or round
1 egg, slightly beaten
1 can (8 ounces) tomato sauce
2 cups packaged herb-seasoned stuffing mix
1/2 teaspoon salt
dash pepper
grated mild Cheddar cheese


Combine ground beef, egg, 1/2 cup of tomato sauce, stuffing crumbs, salt, and pepper. Shape mixture into a loaf and place in shallow baking dish. Bake for 50 minutes; remove from oven and top loaf with remaining tomato sauce and shredded cheese. Bake meatloaf 10 minutes longer.

Tomato Relish:
Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
11/2 pounds ground beef
1 pound ground pork
3 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices


Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.

Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.

This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.

Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.

Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

Easy Pleasing Meatloaf

Prep Time: 10 min

2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided

PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour or until cooked through (160ºF).

Great Substitute
Substitute ketchup for the barbecue sauce.
Substitute ground pork or veal for the ground beef.

Mix hamburger, 6 slices of bread torn into pieces, 2 eggs, salt and pepper, onion diced, mix thoroughly, cook at 350-375 till done in the center, mix 1/3 cup brown sugar and 2 tsp of mustard in seperate bowl for topping, put topping on loaf 5 minutes before done cooking.

Take one pound of lean ground beef. Mix it together with one 8-ounce can of tomato sauce and one cup of Italian bread crumbs. Place one half of a cup of cheddar cheese on top, along with pre-cooked strips of bacon.

Bake at 350 degrees for approximately forty five minutes. If you substitute eight ounces of ketchup for the tomato sauce you've basically made a giant bacon cheese burger meatloaf. Finish by draining off the fat and allow to stand for ten minutes.
