I just made the best marinated fried chicken the other night,
1/2 Cup Olive oil
juice of one lemon
2 cloves of garlic roughly chopped
1 heaping tsp rosemary
1 heaping tsp thyme
put all of the above in a ziplock bag along with the chicken and marinate for atleast 4hrs.
Then drain the marinade roll the chicken in flour that has been seasoned with salt and pepper and fry in a skillet that has 1/4 Cup of olive oil heated
turning to brown on all sides and cook until done atleast 30 min. Drain on paper towels.

Mustard-Herb Marinade For Chicken
1/2 c Dijon mustard
2 tb dry mustard
2 tb vegetable oil
1/4 c dry white wine
2 tb dried tarragon
2 tb dried thyme
2 tb dried sage; crushed
Instructions
Mix all of the ingredients in a bowl. Let stand 1 hour. Add chicken and
coat well. Let chicken sit in marinade 3-4 hours. Pat dry with paper
towels. Use the remaining marinade to baste chicken just before removing
from the grill.

I use a good white wine for marinating Chicken and good red Cabernet for beef. The wine also tenderizes the Chicken and Beef. After cooking the Chicken or Beef, I use some of the marinade for a sauce. I reduce the wine and when it's to the proper consistancy I add 5-6 pats of Butter (not oleo). Add 1 pat at a time a stir until melted. Adding more than one at a time can cause the sauce to break.
If you want a creamy sauce just add cream and reduce the wine/cream mixture and add the butter.

Chicken Marinade
Ingredients
2 cups balsamic vinegar
1 tablespoon crushed red pepper flakes
1/2 teaspoon oregano, dried
1/2 teaspoon basil, dried
1 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon paprika
2 cup olive oil
Directions
Add all of the ingredients except for the oil and whisk well; add the oil and whisk. Pour the mixture over to cover the chicken you are using in a glass bowl. Refrigerate overnight, stirring the marinade and turning chicken several times. May be grilled or broiled, basting often with marinade.

HONEY SOY CHICKEN
cut chicken into pieces.
Marinade for about 7 to 10 pieces
1) place a small pot onto the stove top on a low heat
add,
2-3 tablespoons of honey into pot
1 teaspoon crushed garlic (around 3 cloves)
1/2 teaspoon ginger
1 cup of soya sauce
1/2 cup water
For extra kick add chili to taste
Mix all ingredients together in pot till honey is melted.
Make thin slits into chicken then place in a air tight container for marinating.
Pour marinate over the chicken.
Place lid on container and shake.
Leave in the fridge at least 6 hours turning over every few hours. Best over night.
Either bake in oven or on BBQ.
When baking in oven place only the chicken on a tray and cook as normal ,every 15mins baste the chicken with the left over marinate. till cooked.....
With BBQ marinade the chicken every 4 to 5 mins. cook for at least 45 mins.
yum yum yum .
A HINT. when cooking the chicken on a BBQ watch for bee's as they are attracted to the scent of the honey.

If you use Italian dressing, you don't need to add anything else. This is great with chicken breasts.
I like using teriyaki as a marinade. I sometimes add more flavor by shaking some powdered onion and powdered garlic on the meat, too. Teriyaki works equally well with beef or chicken.
If you like spicy food, look in the hot sauce section of your supermarket for a Jamaican "jerk" marinade or rub. Yum!
