Bread and Butter Pudding
Makes 12 to 15 soup cups
325 degrees, convection
6 qts 1 inch bread cubes, combination of cinnamon rolls and Danish pastries works best.
(avoid any hard bread, like bagels, or any odd flavored muffins)
12 whole eggs
6 yolks
2 c sugar
2 tsp vanilla
½ tsp salt
2 qts ½ & ½
8 oz raisins
Put bread into a large bowl and set aside.
Whisk the eggs, yolks, sugar, vanilla, salt and ½ & ½ together and pour over bread in bowl. Set a large plate on top and weigh it down to keep bread immersed for 15 minutes.
Soak raisins in warm water and drain. Toss with the bread, then spoon into well greased soup cups and place in baking pan with water halfway up the sides. Spray the underside of foil with pan spray and cover cups before placing in oven. Pierce the foil in several places to let out the steam, then bake for 30 minutes. Remove foil and bake for another 10 minutes, or until the tops are golden brown and puddings are puffed up over the tops of the cups. Let rest for 20 minutes at room temp. Remove from water bath. Puddings will still be quite warm. Hold by the cup with a towel and shake vigorously to loosen from cup. If you need to, run a knife around the edges. Dump out of the cup to serve.

Old-Fashioned Bread Pudding
INGREDIENTS:
2 cups milk
3 eggs, beaten
1/3 cup sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
4 slices white bread, without crust
1 teaspoon cinnamon
dash nutmeg
1/2 cup raisins, optional
PREPARATION:
Heat milk over low heat until hot, but not boiling. In a bowl, combine eggs, sugar, and salt; stir well. Gradually stir about 1/4 of the hot milk to the egg mixture and stir in. Add remaining milk, stirring constantly.
Stir in vanilla.
Place bread slices in a buttered baking dish, (sprinkle raisins over bread, if used), about 2-quart size. Pour the milk mixture over bread. Combine cinnamon and nutmeg; sprinkle over pudding mixture. Bake, uncovered, at 300° for about 50 minutes, or until a knife inserted near the center comes out clean. Serve warm with vanilla sauce or other dessert sauce, if desired.

one dozen day old glazed donuts
chopped into bite sized pieces.
one can eagle brand sweetened condensed milk
juice of one lemon
2 eggs beaten
mix all ingredients together.. you can use a hand mixer to get smooth texture or leave chunky.... depends on your own tastes.. place in a buttered or pam coated 9 x 11 baking dish and bake at 375 for 30 to 40 minutes.
easy glaze-
1 stick butter melted, one box of powdered sugar, 1 jigger of rum. stir until sugar is well incorporated, drizzle on top of hot pudding.

when one of my girls makes it she uses glazed donuts. my suggestion would be to use one of the recipes listed but substitute the donuts.
it is so good!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
