Strawberry Pie

This is my favorite pie, very easy to make.

INGREDIENTS:
1 (9 inch) pie crust, baked
1 quart fresh strawberries
1 cup white sugar
3 tablespoons cornstarch
3/4 cup water
1/2 cup heavy whipping cream

DIRECTIONS:
Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over berries in pastry shell. Chill for several hours before serving. In a small bowl, whip cream until soft peaks form. Serve each slice of pie with a dollop of whipped cream.

This is my own recipe.

Use around 2 to 3 lbs. of fresh strawberry's. Wash them and let them drain in a strainer. Save about 10 to 12 strawberry's for later. Cut off tops then make slices from the top to bottom. Put strawberries in bowl, add 3/4 cup of red wine, or strawberry flavored sparkling water, add 1 1/4 cup sugar, stir around, place plastic wrap over bowl and leave in refrigerator for one night. Using a slotted spoon, spoon out strawberries into the pie crust, put the juice to the side. Cover the pie with a thick layer of whipped cream, and put in the refrigerator for about 4 hours to set. Cut tops off remaining strawberries and slice vertically, decorate the whipped cream with fresh strawberries. Juice can be used as a sauce for one who wishes for it after cutting the pie.

I spent last week researching how to make a cherry pie. I just ended up buying one at the bakery - much better that way!
