I need to eat more fish! I already LOVE sushi, but I think some plain old fish dinner at home might be a cheaper route...

my favorite is red snapper, what you do is take a whole red snapper fish, all you have to do is gut it and you can buy it gutted already, ok... heres what you do, get a flat pan , put olive oil all over the inside and outside of the fish, go and buy some sea salt, so now you have some olive oil all over the fish, and you can use as much as you want, now completely cover the fish in sea salt, but do not use to much sea salt, remember fish absorbs easily, only use one layer of sea salt, now put your oven on 350 and then wrap the fish in aluminum foil, wrap in loose, you can put veggies in with it, but you don't have to, and just let it cook for about 15-20 minutes a pound, when you take it out and peel the skin off, it will fall off the bone, it is sooooooooooo good, you may have to try it a few times to get it perfect, but its worth it.

(insert white fish of your choice) with Tropical salsa
Serves 4

4 - 6oz peices of white fish, such as cod, halibut or mahi
6 tablespoons extra virgin olive oil
3/4 cup white wine ( one you would drink!)
1 mango skinned and diced
1 pineapple cleaned and diced to 1/2 inch cube
1 red bell pepper diced fine
1 jalapeno cleaned of vein and seeds, minced
1 shallot minced
2 cloves garlic minced and pasted on a board with a bit of salt
1 bunch cilantro chopped fine
juice of 2 limes
salt and pepper
Seed of cumin (or coriander) ground to 1 tsp

Dust fish with black pepper and cumin (my preference) and reserve in fridge. Assemble all fruits with peppers, cilantro, salt and pepper to taste, 3 tbsp of the olive oil and shallot. Add lime juice and reserve in fridge.

In a hot saute pan, add remaining 3 tbsp olive oil and sear fish to a quick brown crust and turn when medium firm to the touch ( about 3 minutes for a cut of 1 inch). When fish is turned, add white wine to deglaze, add garlic and finish on same high heat for 2 minutes more. Top with tropical salsa.

really nice and simple recipe... melt butter.. put in bottom of baking dish....put fish in .. flipping it so it is covered on both sides... lightly salt and pepper.. and light covering of parmesan cheese.. bake until done... yummmmmmmmmm
