Preferrably using ingredients that are most likely to already be on hand. I need a main dish, but I am definately open to side dishes. I am trying to build up a recipe book with delicious, simplistic recipes. We love all vegetables except for most beans, and also most meats. Oh! Don't leave out the dessert ideas! :)

Turkey/Beef Pesto Loaf
Preheat oven to 375 F.
Mix together:
2 lbs. ground turkey or beef
1 c. breadcrumbs
1 egg (beaten)
Roll out on 8X12 baking pan
In Bowl mix : 1/2 c. parmesan cheese
2 c. fresh basil, chopped
1/2 c. fresh parsley, chopped
2-3 cloves garlic (minced)
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. olive oil
Makes 2 cups of Pesto
Lay on top of ground turkey/beef. Roll like a jelly roll --
pesto inside. Bake in 375 degree oven for 30-40 minutes.
Sprinkle top with olive oil.
A variation on this - mix 1 lb. ground beef with 1 lb.
pork sausage. But mix it well - I did that once, and didn't
mix the 2 meats too well. It tasted fine, but sure looked funny.

Easy Chicken Tetrazzini 1 lb boneless chicken breasts or a whole chicken cut up (or a store bought rotisserie chicken) 1 lb spaghetti 1 small box velveeta cheese 1 can rotel tomatoes 1 can cream of chicken soup ¼ cup shredded cheese In a large pot of boiling water seasoned with salt, pepper, garlic power and onion powder place (or use fresh garlic and onion minced) place chicken and cook gently until done (about 20 minutes) Remove chicken from water (reserve the water) and return water to a boil. Add pasta and cook until aldente Cool chicken and cut into bite size pieces In a small pot put soup, cheese and Rotel and melt slowly together Drain pasta and place in a large casserole dish and mix in chicken and cheese mixture. Sprinkle shredded cheese over top. Bake at 350 for about 10-15 minutes til bubbly and serve with some crusty bread. This freezes exceptionally well so make a double batch and freeze one without baking. When cooking later be sure to defrost before baking

This is a great one for a hot day. Taco salad and Strawberry shortcake for dessert.
Taco Salad - Cook 1 lb hamburger and follow directions on Ortega taco seasoning to make it taco meat. Tear up a head of lettuce and add tomato, onion, green pepper (whatever veggies you like). Mix together the veggies, meat, 1 pkg shredded cheese (again whichever you like), and toss with Western dressing to taste.
Strawberry Shortcake - Buy dessert shells (shortcake). Top the shortcake with mashed strawberries (fresh or frozen). Top with whipped cream (Cool Whip or the real thing). Done! The strawberry shortcake can also be served with milk or cream.

Crunchy Ham Cassarole
two cups of large elbow noodles (cooked)
one pound of ham, cubed
mix these two together and put in a baking dish
in a seperate bowl mix:
one can cream of chicken soup
one cup of cheddar cheese
1/2 cup milk
one small container of sour cream
pour this mixture on top of the noodles and ham
bake in a lightly greased pan at 350 for twenty minutes
remove from oven and stir
top with one cup cheddar cheese and one can of Frenches Fried Onions
bake an additional ten minutes

I only know a really good desert recipie. On the back of nestle chocolatechips there is a cookie recipie I changed it to a brownie recipie! Put all dry ingrediants in first and add mini chocolate chips alot of them!! Then melt the butter! That was the most important thing!! and then just follow the rest of the recipie. I t is really good I added walnuts but u don't have too!!

Two cans of chili con carne, one bag of frozen corn, 1 cornbread mix. Pour the chili into a 9X13 casserole dish. Mix half the corn into it. Mix the cornbread according to the package adding the other half of the corn. Bake according to the temp on the cornbread package, adding 5-10 minutes. (Keep an eye on the top so it doesn't burn.

okay quick and easy..
1 pkg of skinless boneless chicken
1 pkg of broccoli and cheese (jolly green giant frozen kind)
1 pkg of egg noddles
cook noddles and chicken separate
microwave the b&c right before the chicken and noddles are done.
then when everything is done, mix it all together
and sprinkle shreded cheddard cheese over it.. and it is totally yummy and quick about 20 mins all together for prep and cooking time..
for dessert.. jell-o makes a no bake cheese cake mix for about $1.50 at walmart and it sooo yummy and you can place your own fruit on it and it is good.

try the breaded chicken breast (in the freezer section) and bake it. then make angel hair pasta & sauce. place the chicken on top of the pasta & sauce. add cheese of your choice or parmasean. Viola!!!
you have chicken parmasean. it only takes at least 20 min.
for a dessert try : the cresant rolls(like Pillsbury) add mini chocolate chips,roll and bake.

Both are good for you, each fruit/vegetable has different vitamins. And so as more variety, as better. Vegetables have generally less sugar than fruits.
