depends on my mood - with a great glass of wine I love a great soft cheese, such as Saint Andre; Manchengo is also a favorite
For snacking in the afternoon, a white cheddar or asiago is also really good!

My fave is Pleasant Ridge from Dodgeville, WI--it is awesome, but pricey--about $30/pound.
I also enjoy a good camembert or brie
