Butternut Squash

here is one way to do it

(i just cut it open, scoop the seeds out, put in baking pan with water, bake 1 hour at 375, scoop out of skin and serve)

So much flavor concentrates in the skin of vegetables - I'm always delighted when I find a recipe that includes it. Note that some butternut can be very hard, so take care when slicing them. Baked squash is delicious as an appetizer with wild mushrooms, or as a side dish with duck, pork, and game.

1 medium butternut squash (about 3 pounds)
2 to 3 tablespoons melted butter
2 to 3 tablespoons vegetable oil
1 teaspoon sugar
Salt and pepper
1 bunch rosemary
1 bunch thyme
3 to 4 bay leaves

Heat the oven to 375 degrees F (190 degrees C).
Using a large chef's knife, cut the squash in half lengthwise and scoop out seeds with a spoon. Set each half cut side down on a cutting board and cut them crosswise in 3/8-inch slices.
Brush a heavy baking sheet generously with butter and oil. Line up the squash slices on the baking sheet and brush them. Sprinkle with sugar, salt, and pepper and tuck herbs around the slices.
Cover with foil and bake in the oven 30 minutes. Remove foil and continue baking until undersides are brown, about 15 minutes, then turn the slices.
Bake 5 to 15 minutes more until the squash is very tender, brown, and crispy around the edges, 50 to 60 minutes total. Don't hesitate to brush with more butter and oil during cooking if it looks dry. For serving, transfer to a platter or individual plates.

Tasty Baked Chicken.............

8 to 10 Chicken Leg quarters (separated)
1 envelope of Taco Seasoning
1 cup of water
1/4 cup of Worcestershire sauce
Seasoning Salt
Paprika

Basting, Marinade brush
Large Baking Pan

Preheat oven to 400* Mix Taco Seasoning with water, Dunk each piece of chicken in taco seasoning mixture, then put in pan. Then repeat, If any mixture is left over. Sprinkle seasoning salt on all of the chicken in pan, Then brush chicken with Worcestershire sauce. Cover with foil and put in oven for 1 1/2 hours or until tender.

30 minutes before chicken is done, sprinkle chicken with paprika, then with pan juices, brush chicken once again.

If you want a sauce for the chicken, pour most (not all) of liquid from pan, and pour into a saucepan. Take 2 - 3 tsp of cornstarch with 1 - 2 Tbsp of cool water, blend smoothly and add to chicken juice (blend smoothly). Heat to boiling, and pour on top of chicken. Brush evenly once again with pan juices.

ENJOY!!!!!!!!!!!!!!!!!!!!

Fresh sockeye salmon cooked Indian style. You hillbillies do not know what you're missing.
It's got to be cooked slowly over alder or a similar wood. Just salt and pepper. Do not overcook! It's good for you too, omega-3 oils.
