It's not a theory. It's a way to describe the belief that God consists of what we can't explain... or God consists of whatever "falls through the gaps" of human knowledge.

For example, Thor was the Norse god of lightning and thunder. We now have a better understanding about lightning and thunder, so that gap in our knowledge has been filled in and Thor (and other weather-related gods) are not worshipped to the degree they were before.

The current arguments betweeen Creationism and Evolution further underscores this. How did we get here? In the past, a god was used to explain this. However, we now have a scientific theory that can be used.

It basically posits that where there are gaps in scientific knowledge, the explanation is God. This presents a problem as the gaps grow smaller or disappear. It is a very weak theosophical position.

continually appeared to me that logic crammed something. Logically, if over the centuries guy has crammed "the gaps" earlier, then, why does no longer guy proceed to fill those "gaps" with technology and logic back?

"god of the gaps" is not a theory per se, but rather, a phrase used to describe all such arguments that amount to "since you can't explain X, god did it".

It's a saying that talks about how some people simply say "god did this" to explain things that they don't understand. For example, "where did the earth come from?" "hmm, i don't know... so I'm going to say... God created it!"
