Well, for starters, maybe cut back on the coffee a little. Caffeinated beverages are dehydrating.

Actually, though, I think it's probably as simple as breathing through your mouth while you're sleeping. Is it possible you have a sinus infection or a deviated septum?

You might want to give those nighttime nasal strips a shot. If you're breathing through your mouth while you sleep because your nasal passages are stuffed up, it could help.

You're most likely dehydrated. You are also most likely a mouth breather or your nose has been stuffy. Lay off the caffeine and up the water intake.

You can use Biotene Dry Mouth products if its really bothersome.

Coffee is a diuretic. It will make you urinate frequently. Drinking a glass or two of water with dinner may help. Sleeping with your mouth open will make your palate quite dry as well.

It could be dehydration from the coffee even though you drink water. If it occurs often I would consult a doctor.

You may be sleeping with your mouth open. Lay off of the caffiene as it will irritate your bladder and make you urinate more often; drink non-carbonated drinks.
