I don't think it's the best I've ever made, but the kids eat it like crazy.

Slice a package of Keilbasa on the diagonal, saute in a little olive oil with onion, garlic and mushroom. Drain of some of the grease and put it all ina casserole dish.
Cut up about 5 baked potatos or boiled potatos (or cut up fresh and saute them until they begin to soften.) I always make extra potatoes when I cook them for faster dinners or breakfast later in the week.
Add that to a casserole dish.
Combine a can of cream of mushroom soup with half a pint of sour cream with 1/4 can of heavy cream or milk. Pour over and mix. Add fresh cracked black pepper and salt to taste. Bake 350 30 minutes. Take out, sprinkle with grated cheese, return to oven for 10 minutes.

Sometimes I add red and/or green peppers, chunks of celery, cubed cheeses in different flavors, fresh basil or rosemary. But there are never any leftovers.

Charlie Gibson's Enchilada Casserole

Casserole Ingredients

1 large 13-ounce package Doritos (save 2 cups for casserole topping)
2 tbsp. onion, grated
1 10-ounce can chili with beans
10- to 15-ounce enchilada sauce
8-ounce can tomato sauce
1 and 1/2 cups shredded sharp cheddar cheese


Topping Ingredients

2 cups Doritos
1/2 cup shredded cheddar cheese
1 1/4 cups sour cream

Casserole Directions

Preheat oven to 375 degrees

Crumble 6 cups Doritos with your hands into a large mixing bowl.

Add the onion, the chili, the enchilada sauce, tomato sauce and 1 and 1/2 cups of cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine. Place mixture into an 8 1/2 x 11-inch oven proof casserole dish.

Bake for 20 minutes.

Remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheddar cheese.

Bake for another five minutes and serve.

Western Meal in One Recipe

1 lb ground beef
1 tablespoon vegetable oil
1 garlic clove
1/2 cup onions, chopped
1/2 cup green peppers, chopped
1 teaspoon salt
1 teaspoon chili powder
1 (16 ounce) can red beans, drained
2 1/2 cups tomatoes with juice, chopped
3/4 cup uncooked rice
3/4 cup grated cheddar cheese
1/4 cup sliced black olives

6-8 servings Change size or US/metric
Change to: servings US Metric

1 hour 15 mins prep
Brown beef in vegetable oil with garlic.
Add the onion and green pepper;cook until onion is transparent. Drain off fat.
In a 2 qt casserole, combine the meat mixture, salt, chili powder, beans, tomatoes and rice.
Bake covered at 350 degrees for 30 minutes.
Uncover and sprinkle with cheese and olives; bake for 15 minutes more.

Rice Casserole

*2 cups of uncooked rice[long grain rice]
*1 brocolli, cooked and only use the brocolli not the stem
*1 onion
*2 tins of cream of chicken soup
* one small jar of cheese whiz

1. saute the onions in butter
2.cook the rice
3.parcook the brocolli

mix all the ingredients and bake in casserole dish covered for 1 hour.

This one is simple and delicious if you're a veggie lover.

Corn-Green Bean Casserole

1 can white shoe peg corn
1 can French style green beans
1 can cream of mushroom soup
1/4 cup each celery and onion
1/2 cup each mayonnaise, sour cream, cheddar cheese (grated)

Combine all ingredients. Bake at 350° F for 30 to 45 minutes

Ritzy Chicken Casserole

INGREDIENTS:
2 sleeves Ritz crackers
1 can cream of chicken soup, or cream of mushroom
1 cup sour cream, regular or reduced fat
1/2 cup chicken broth
4 to 6 boneless chicken breast halves, cooked
4 ounces melted butter, melted
PREPARATION:
Crumble one sleeve of Ritz crackers in the bottom of a 2 to 2 1/2-quart casserole dish. Drizzle half of the melted butter over the crackers. Mix chicken with soup, sour cream, and broth. Pour over crackers. Crush the remaining sleeve of crackers over the chicken mixture. Drizzle the remaining melted butter over the crackers. Bake at 300° for 30 to 40 minutes, until hot and bubbly.
Serves 6.

well, i hate this one, but some of my family loves it:

ASPARAGUS CASSEROLE

2 cans of asparagus spears (drained)
1 can of cream of mushroom soup
4 hard boiled eggs (sliced up)
6 slices of american cheese
1 tube of Ritz crackers (crushed up)

heat oven to 350

in a rectangle casserole dish-lay the drained asparagus spears in rows across the bottom-then pour in the can of soup and smooth over evenly-then lay the hard boiled eggs slices over the top evenly- lay the cheese slices on top next evenly-sprinkle the cracker crumbs over the top evenly.

bake until casserole is bubbling and the crackers are nice and toasted. (around 30 mins)

Sweet Potato Casserole. I don't have a recipe but I know it contains sweet potatoes, marshmallows, nuts and cinnamon.

mexican casserole
this is very easy-little prep time-surprisingly tasty
1 lb lean grnd beef, browned
1 pkg spanish rice mix, prepared
2 cans cream style corn
1 can stewed tomatoes
i can ripe olives
Mix all together and add 1 cup of grated cheese, hot sauce to your taste and tortilla chips.
