Go to allrecipes.com there are alot of free recipes there. They are all rated from 1-5....Now I like to put some legs and thighs into a 13x9 baking pan. Sprinkle on some poultry seasoning, lawrys seasoning salt, Cajun Spice, pepper, and just a little bit of cayenne pepper. Be generous on the poultry seasoning and cajun spice. You may want to remove the skins or not. Depends on what you like. But bake that on 350 covered with foil for about an hour or until chicken juices run clear. and thats all. (jen)

I use this recipe:

Crispy Herb Baked Chicken
2/3 cup mashed potato flakes
1/3 cup grated Parmesan cheese
2 teaspoons dried parsley flakes, if desired
3/4 to 1 teaspoon garlic salt
1 (3 to 3 1/2-lb.) cut-up frying chicken, skinned if desired
1/3 cup margarine or butter, melted

Heat oven to 375°F. Grease, or line with foil and grease 15x10x1-inch baking pan or 13x9-inch pan.
In medium bowl, combine potato flakes, Parmesan cheese, parsley flakes and garlic salt; mix well. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan. Bake at 375°F. for 45 to 60 minutes or until chicken is fork-tender and juices run clear.

To reduce fat, dip chicken pieces in 1/3 cup milk instead of margarine.

BAKED HONEY MUSTARD CHICKEN THIGHS

3 tbsp. honey
3 tbsp. yellow mustard
8 chicken thighs, rinsed, patted dry
Salt, freshly ground pepper
2 cups fresh bread crumbs
1/4 cup Italian herb seasoning mix

Preheat oven to 350 degrees F.

Combine honey and mustard in small bowl. Brush over chicken thighs. Season with salt and pepper.

Combine bread crumbs and seasoning mix on plate. Roll chicken in crumbs to coat. Place chicken thighs in greased baking pan.

Bake until juices run clear, about 30 minutes.

Makes 4 servings

You can make a nice Chicken Cacciatore with the legs & thighs.

MAGDALINAS VALENTINE CHICKEN

4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount

flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.

Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.

Drain and remove excess grease from skillet.

Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.

Simmer on medium heat till onions are soft.

Marinate them in olive oil, garlic, lime juice, cilantro, cumin, kosher salt, and pepper for at least an hour(longer if possible). Either bake or grill until done.

Good old fashioned fried chicken is always good.

I don't exactly understand your question. I would just get some chicken legs and thighs, marinate, and grill. Serve with a side of fresh corn on the cob and maybe some macaroni salad?

Broil them. Put them on a broiler pan on the lowest oven rack -- farthest away from the heat element or flame. Broil for 25 mins on each side. Then brush with barbeque sauce. Broil for another 5 mins. Easy and delicious. You can also do it on a grill outdoors.
