most of the time the flight attendants are polite and serve with a friendly attitude but then you get the grumpy narky people who wouldnt care if you went thirsty, hungry or uncomfortable
i expect a friendly poilte person who listens to my queries and takes on board what the customers want

Oh is that a loaded question!!! You picked the wrong month for me with this question.
On a U.S. major airlines (excluding discount airlines):
Once upon a time, I expected to be treated like a welcomed customer. Friendly staff, fed well and if I was lucky would arrive on time with all of my bags.
Today, if I get treated friendly, receive anything that looks like food, I feel like I've hit the jackpot. If I arrive on time with bags, and nothing broken or stolen it's like winning the lottery.
Major European airlines are almost as bad. Major Asian airlines have kept the old standard.
Discount airlines are a different story, you go in knowing what you are going to get. They never pretend to have the little extras. However I have found that overall, they are much friendlier.
As of three weeks ago, what do I expect... the worse possible time of my life.
Having been gone for 18 months on the other side of the world, I was flying with maximum luggage and carry on. The trip was just over 20 hours of air time and 14 hours of ground time... 34 hours of travel. The first 2 segments went just fine, was on an Asian code share. However, when I switch over to my U.S. aircraft things when down hill quickly!
Had now been traveling 14 hours and was feeling a bit tired. As I boarded the aircraft, I asked the attendant if she would mind helping me put my 40 pound bag in the overhead, she said she couldn't ! I asked if there was a male attendant on board... NO in a very firm voice. Luckily a younger flight attendant from 'coach' walked through and offered to help.
As we flew over Alaska, the I opened my window shade a little bit (everyone around me was awake or had their mask on). The sky was clear, and it was a beautiful sight to see... then came the flight attendant... YOU HAVE TO CLOSE YOUR SHADE.
After we landed, the flight attendant had the nerve to ask if I really used all of that stuff I was carrying.
After landing and clearing customs, it was time for the domestic segment of the trip. I only thought the last segment was bad. Now at 30 hours of traveling, my body is tired and the staff has made sure my attitude isn't at it's best either.
All I want is a little snack, a pillow and a blanket. Fat chance! All I got was a bag of mixed nuts, a bag of pretzels, and sorry we don't have pillows or blankets.
BTW, I wasn't flying coach. It was business class & the domestic was first class!
When I arrived at my home airport, and went to claim my luggage, one suitcase was missing. I asked the guy by the belt.. oh yes we have it. He went in the back and returned with a smashed, missing handle and wheels suitcase. His only comment was, it lost it's tag, so we needed to wait for you to ask for it. When I cleared customs, it was looking just fine. While I know how to file a complaint, he had no way of knowing this. Even a simple 'Sorry about that' would have been an improvement over nothing.
What do I expect, for things to get worse, until the airlines figure out that they need to treat their customers as guests.
I will admit not all staff is this bad, there are a few left who are polite and helpful. Just wish there was more of them.
End of rant. WOW I think I now feel better, now. ;-)

I expect to be taken from Point A to Point B. I expect the service personnel (flight attendants, gate crew) to be friendly and professional. It's a plus if they pamper me but I've learned not to expect this, even in First Class--- too many other passengers competing for their attention. I understand that delays and lost baggage are things that just happen, and are usually out of the airline's control so I don't expect to get lots of special handling when that happens but I do expect the airline staff to be nice about telling me there's been a problem. I don't expect an airline to actually pay for my hotel, should my flight be cancelled, but I do expect them to offer their phone and some suggestions for local hotels if I need to stay over unexpectedly.

if you are flying in an American airline espect to be treated like a peace of **** who gets kicked and you are lucky if you get good food to eat and even if you get food you still have to pay for it in the airplane, while if you fly in an Asian airline it would be a very nice flight and the attendants will treat you very nicely.
