Try any of the following, it's simple, fast and easy. And your visitors will love it.

(1) Stir-Fry Dinner -
Ingredients:

1/2 lb smoked sausage, sliced
1 small onion
1 sm green bell pepper
1 sm red bell pepper
1 zucchini
1 tomato
4 oz sliced fresh mushrooms or 1 sm can sliced mushrooms
1 tb Oyster Sauce
2 tb Soy Sauce
2 tsp Stir-Fry oil
1/4 cup chicken broth or water

Method:
Thin slice the onion, bell peppers, and zucchini.
Add stir-fry oil to wok or fry pan and heat. Add sliced sausages and onion and brown. Add sliced vegetables except tomato. Stir well to make sure everything is coated with the oil. Add sliced tomato. Add oyster sauce, soy sauce, and 1/4 cup broth or water. Mix well. Turn fire to low, cover pan, and simmer about 10 minutes. Thicken any liquid left in the pan with 1 tsp cornstarch dissolved in 1/4 cup broth or water. Serve over steamed rice.

Prep Time: 15-20 minutes Cooking Time: 20 minutes

(2) Beef Wellington -

2 ½ -3 lb. beef tenderloin
olive oil
1 pkg. puff pastry sheets
1 egg yolk, lightly beaten
sesame seeds
1 recipe of duxelles (included)
Preheat oven to 425 degrees.

Place beef on a rack in a baking pan. Brush with olive oil. Bake for 45 minutes, or until a meat thermometer registers 150 degrees for medium rare meat. If rare meat is desired, bake for about 37-38 minutes, or until the meat thermometer registers 140 degrees. You may also grill the meat; preheat the grill and check for desired doneness. Cool the meat.

Duxelles:

½ lb. chopped mushrooms
¼ c. chopped onion
2 Tbsp. butter
¼ tsp. marjoram
dash of black pepper
1 Tbsp. flour
2 Tbsp. beef broth
1 Tbsp. chopped parsley, or equal amount dried
1/3 c. finely chopped ham, cooked

Sauté the mushrooms and onion in the butter until the mushroom liquid evaporates. Stir in marjoram, pepper, flour, and broth. Cook, stirring constantly, until mixture thickens. Remove from heat, and stir in the parsley and the ham.

Assembly:
Put the pastry sheets together to form one long sheet. Spread the duxelles on the pastry, leaving a space along the edges (about ¼- ½ inch). Place the beef on the center of the pastry and fold the pastry up over the beef. Place seam side down in a shallow baking pan. Pinch the edges together slightly to prevent the duxelles from cooking out. Brush the pastry with the egg yolk mixed with a few drops of cold water. Cut slits into the top of the pastry and sprinkle with sesame seeds. Bake (at 425 degrees again) for about 30 minutes.

(3) Chicken Croquettes -

2 1/2 cups finely chopped chicken
1 cup finely chopped celery
1/2 cup finely chopped onion
1 tsp. allspice
1/2 cup milk
1/2 cup chicken broth
3 tbsp. butter
3 tbsp. flour
1/2 cup breadcrumbs
3 tablespoons oil

white sauce: In a medium saucepan, melt 3 tablespoons of butter over medium heat. Add flour and cook, stirring for 1 to 2 minutes without browning. Salt and pepper to taste. Gradually whisk in milk and chicken broth, stirring constantly, until smoothed and thickened. Remove from heat and let cool for 10 minutes. In a large bowl, blend chicken, celery, onion, and allspice. Add cooled white sauce and blend. Salt and pepper to taste. Let chill in refrigerator for 2 hours or overnight. Shape chicken croquettes into 2-1/2" balls and roll in breadcrumbs. Heat oil in large skillet and fry chicken croquettes until browned. Approximately 15 minutes. You can at this point put the croquettes in the oven to keep them warm. Place the croquettes on a cookie sheet and cover with foil and place in a 200 degree warmed oven to keep warm until ready to serve.

SAUCE FOR CROQUETTES AND POTATOES:

2 tablespoons butter
2 tablespoons flour
1 cup milk
1 cup chicken broth

In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add flour and cook, stirring for 1 to 2 minutes without browning. Gradually whisk in milk and broth, stirring constantly, until smoothed and thickened.

Lasagna is pretty easy. The "no-bake" kind. There is a recipe on the side of the box the noodles come in. All you really need is like a 13x9 pan and a couple of mixing bowls. I got tired of take-out a few years back, and decided I would learn to cook homemade meals. It always turned out good for me.
