I've seen them do it in movies, but given that these things are going Mach 3+ I find it hard to believe...

Partially yes.
If it is within the heat seeking range and the radius of target is big enough to make the missile follow its route, it can happen. The missile however can not make a sudden and sharp U-turn on very short & split second notices.
That is where the reflexes, the professional skill and sharpness of the pilot counts.

That is so bogus! A heat-seeking missile has to get within a certain range to pick up the heat signature that it homes in on. If you just fire it blindly into the air it WILL NOT fly around in circles looking for a jet exhaust!

NO, minor guidance only & it does have to see the target. Depending on the missle, that could still be from fairly far away, but there is still a cone shaped envelope in which it can see or hit a target.
