I love to serve a fruits in the morn its so refreshing.
what i like doing that is Delicious and simple... is
take a bagel. ( u could also do this with a slice of preferably brown bread and make hole in the middle about 1.5 inch diameter) and lightly butter both sides... put it on the side. in a bowl prepare an egg mixture of whatever you like ,,, such as some green onions and bacon, or some vegetables... then in a frying pan on high heat put a bit of oil then in a few seconds put the bagel and the egg mixture in the middle, ( enough egg to be at same level as top of bread or bagel.) then after cooking on both sides for 10 seconds.. lower the heat to about medium low so that the egg will cook through.... right about near the end i sprinkle on both sides a dash of salt, pepper and garlic powder ....
serve when hot with some fruits on the side...

Hollandaise sauce:
1 stick (4 ounces) butter, sliced
4 egg yolks
1 lemon, juiced
Lobster roe (orange immature lobster eggs, availability depends on the luck of the lobster)
1 tablespoon butter
1 (1 1/2 pound) lobster, cooked and shelled (a good way to use leftovers from shore dinner!)
10 slices, about 1/2 pound, Canadian bacon
5 English muffins, split
10 eggs
Minced fresh parsley
Paprika
Melt half of the butter in top of double boiler over hot, but not boiling, water. Add egg yolks while stirring. Add remaining butter and stir until melted, keeping heat low under double boiler. Crumble lobster roe as finely as possible and stir into sauce. Add lemon juice slowly. Set aside and keep warm. Sauce will thicken as rest of dish is prepared.
In a skillet melt 1 tablespoon butter. Dice the cooked lobster meat and saute quickly in the melted butter to heat through. Remove to a bowl and keep warm.
Brown the Canadian bacon in the same skillet and keep warm. Toast the split English muffins.
Poach the eggs for about 3 minutes in an egg poacher, or in skillet of water with a tablespoon of vinegar added. Whites and edge of yolks should be set, center of yolk still liquid.
For each serving, place 2 toasted muffin halves on a plate and carefully layer on lobster meat, Canadian bacon slices, and poached eggs. Cover with Hollandaise sauce. Garnish with minced fresh parsley and paprika.

My favorite has always been eggs benedict but I'm still in search of a low-fat hollandaise sauce. Toasted English muffin half (I don't butter it) topped with a slice of lean canadian bacon (or regular lean ham--I much prefer the cb) topped with a dollop of the hollandaise sauce. I have sliced tomatoes on the side.
I'm going to put out the question re a recipe for LF hollandaise sauce right now. Keep your eyes peeled for answers if you're interested. Enjoy!

I just eat [in general] a slice of brown bread, toaster till golden, with butter and a) jam- strawberry, blueberry, rasberies, b) honey c) cheese [boursin-garlic and herbs]. I have milk to drink, sometimes home-made orange juice, or green tea. When i have the time and feel like it, i fry an egg on one side, along with slices of bacon, and eat it while its hot, with toasted bread and butter. I love cooking too but i don't really have any recipes for breakfast. i guess you usually leave that for lunch and dinner. . . for now, just stick with fruit.

Hi...when you want something easy and healthy, try this:
jazzy Geri's egg and veggies
2 tablespoons Smart balance butter/margarine
2 beaten eggs
salt and pepper to taste
1/2 cup steamed broccoli drained
1/3 cup sauteed button mushrooms sliced
Into a med. sized fry pan melt the butter sub. cook the mushrooms set aside in the same pan add the eggs and cook until it begins to firm up...then add the broccoli....and sauteed mushrooms...salt and pepper cook until done...serve with a glass of V8 juice and some whole wheat toast...have a great morning!

How about some quick cooking oats? A few minutes in the microwave with some milk (preferably soy) , add some sultanas, cinnamon, grated apple, banana etc and you have a great low GI start to the day.

I agree with Brianne--quiche is awesome for breakfast. After i moved out (dad doesn't like it that much so he'll only eat it once) Mom wouldd get tired of eating leftovers so she'd give it to me and i was craving it one morning a voila---new breakfast food. For a quick no cook breakfast----vanilla yogart with granola and fresh or canned fruit (depending on what's in season)

The best breakfasts I ever tasted were, believe me, in Cuba where I had a holiday.
Grilled crispy bacon; an egg - how you like it, poached, fried, scrambled; a mound of fresh fruit salad, particularly pineapple, mango and papaya.
Serve on one plate, with a strong coffee and a glass of fresh orange juice.
