I'm anti-leftovers because of tramatic experiences growing up. I need to learn how to cook for one since my husband's in Afghanistan. Are there any simple recipes I can make? I'm so bored of eating boxed and canned dinners!

Cooking for one is great! My favorite is salmon, rice pilaf, and steamed veggies. Super easy and takes no time. Plus salmon in the seafood section can be any weight. Just butter salmon and baking dish, 350 till you can put a chopstick (or fork for non asians) right through it. Tuna works great too, but I like it seared. Takes like 2 seconds.

Go buy a couple boneless-skinless chicken breasts at the store. Try a couple different things with it.

For example, this is a really simple, but good meal: Buy some shake-n-bake and follow the directions. Make sure you pick up some mandarin-sesame with ginger sauce (or something very similar) to use as a dipping sauce for the breaded chicken. Pick up some fresh greens salad and some raspberry vinaigrette for dressing. Throw in a couple pieces of French bread or a smaller loaf of bread (you can pick up at a local bakery) and you'll have a fabulous dinner. Shoot...throw in some late-harvest Riesling wine and it'd be perfect...the major taste-theme of this dinner would be a sweet taste. Give that a try and see what you think....otherwise there are plenty of websites that feature great recipes. Experiment a little too. You may get so good at cooking that when your husband gets back from Afghanistan, he'll be pleasantly surprised! ;)

ANSWERED BY brand_new_mo..Also use your favorite recipies and portion down for just 1 person, Too bad You are against leftovers because I would cook a large batch of something like spagetti sause and portion it and put in freezer, then use sause for making individual servins of spagetti, or take english muffins with the sause and cheese for mini pizzas, or as a marinara sause for things like fried mozzerella.

What I do since my husband and I do not like the same foods is divide the existing recipe into one serving.

yeah there's plenty. go to kraftfoods.com. they have tons of recipes. just adjust them so they have less portions. like instead of four chickens use one breast or half.

eat one peice of chicken and one baked potatoe... etc... like you can do so much with hamburger meat... you can make enough taco's for just you, a hamburger, etc. 1lb of meat would feet you for a few nights.
