As an executive chef, I must reccomend a Chicken Marsala. First put your boneless skinless chicken breast in flour, then sautee one side of the chicken breast until it starts to brown. After fliping the chicken breast over add a few forest mushrooms and continue to brown on other side. Then add about 1/2 to 3/4 cup of Marsala Cooking wine (Will cause small fire if cooking with gas open flame) Add 1 cup of your favorite gravy a small pad of real butter and throw it in the oven at 450 for about 10 minutes or until the internal temperature is at least 160 degrees.

msStuffed Chicken

Take a piece of boneless, skinless chicken breast lightly wrap in cellophane.

Lightly pound the chicken with a mallet or rolling pin until thin.

In a bowl mix egg and milk

In another bowl mix flour and Italian breadcrumbs. (4x more breadcrumbs then flour)

Take chicken in add stuffing near the end of the chicken, then roll the chicken up.

Dip chicken into the egg wash, then into the Breadcrumbs, for thicker breading repeat.

In general bake at 350 degrees for about 30 – 35 minutes. Breading will be golden brown when finished.

For Chicken Cordon Blue; stuff with ham and Swiss cheese. After breading put a slice of Fontina cheese on top.

For Stuffed Italian Chicken use pepperoni or hard salami and mozzarella cheese and sprinkle with Parmesan cheese.

For stuffed rice, follow recipe for 3 cheese risotto and use rice for stuffing.

Yes. Garlic lime chicken from the Saving Dinner cookbook. She has this posted all over the web, so I don't think the recipe is copyrighted. This is the most amazing recipe. If you decide you love it, you can mix up the spices ahead of time (I mix about 8x the recipe) and keep them in a jar for easy use later.

RECIPE RAVE: Garlic Lime Chicken
Serves 6

1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
6 boneless skinless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil
1/2 cup chicken broth
4 tablespoons lime juice
In a bowl, mix together first 7 ingredients. Sprinkle mixture on both sides of chicken breasts.

In a skillet heat butter and olive oil together over medium high heat. Saute chicken until golden brown, about 5 minutes on each side. Turn down the heat, remove the chicken (keeping warm) and add the lime juice and chicken broth to the pan, whisking up the browned bits off the bottom of the skillet. Keep cooking until sauce has reduced slightly. Add chicken back to the pan to thoroughly coat and serve.

SERVING SUGGESTIONS: Roasted asparagus (preheat oven to 400 degrees, lay your asparagus in a baking dish or pan, drizzle with olive oil, salt and pepper and a smidge of thyme, bake for 10 to 15 minutes, depending on thickness of asparagi), baked potatoes (try Yukon Gold potatoes?delicious!) and steamed baby carrots (add a little butter after steaming and sprinkle some nutmeg on top before serving).

Here's a nice recipe I stumbled accrues in a Kraft cooking magazine. Takes very little effort and is quite good!

Cut up your chicken into small strips and cook in a skillet with some Kraft Roasted Red Pepper and Parmesan Italian dressing and sliced onions.

When the chicken is completely cooked, add some frozen veggies (whatever kind you like) and some more dressing (make is as saucy as you like) and cook until veggies are heated through.

Serve over pasta.

Well I always liked this one First you need 6 skinless/boneless chicken breasts,a chunk of honey ham, or maple flavor,to your taste, butter Swiss cheese, and either a holindase sauce or a honey mustard sauce. First sear the breasts in a pan very quickly, than smother them in butter. cut the ham into slices and place them, and a modest amount of Swiss cheese in between the chicken breasts. Place them in a large casserole dish or baking pan. Next poor in the sauce of your choosing, cover w/foil and bake at 350 degrees until done to your taste, they will turn out moist and full of flavor. This always worked when I cared to impress someone. Serve with asparagus's and cheese sauce, and garlic bread, and a white wine, or Brandy

Cook the breasts in a pan with a dab of butter. Pour 1/4 cup tequila and 1/8 cup lime juice over and let simmer. When chicken is cooked thru, pour 1 cup of shredded cheese over the chicken and let cook for 5 more minutes, until edge of cheese becomes crunchy.
Serve on rice or mashed potatoes.
Low in salt and carbs, high in protein.

If you buy in bulk here's a hint for marinating. When I spilt them up to freeze I add the marinade in the bad and freeze it all together, that way when i take it out to thaw it marinates.

easy chicken salad--cook yr chicken (i've grilled on the foreman, baked, poached) shred or chop it up. Add some Dean's zesty guacomole, a little green onion, salt and pepper, dried cranberries and salted cashews. Makes an awesome spicy chicken salad (i like mine a little on dry side) put this on a multigrain bread with some green or red leaf lettuce and tomatoe---beautiful
