Cheesy Tuna Melt

Makes: 4 servings
1 can (6 oz.) tuna, drained, flaked
3 Tbsp. Mayonnaise
2 Tbsp. chopped celery
8 slices white bread
8 Cheese slices
8 tsp. vegetable oil spread
MIX tuna, mayo and celery; set aside.
COVER one bread slice with one 2% Milk Singles, 1/4 of the tuna mixture and second 2% Milk Singles. Top with second bread slice. Repeat to make 4 sandwiches. Spread outsides of sandwiches evenly with vegetable oil spread.
COOK in skillet on medium heat for 3 to 4 min. on each sides or until lightly browned on both sides.

Drain the tuna and add enough mayonnaise to moisten, mixing it up well with a fork and breaking up all the big chunks.
Spread the tuna on English muffins, bagels, or toast. You can toast the bread first lightly if you like. Top the tuna mix with a slice of cheddar cheese and broil until melted.
The grownup versions can include sauteed diced onion and celery, capers, sliced olives, and whatever else you think might taste good! Then follow the same directions. There was one recipe I tried that I really liked that had you saute onions and celery, then add the tuna, some cottage cheese, and mayonnaise and warm up before topping your bread.

INGREDIENTS:

4 English muffins, split and toasted
8 slices ripe tomato
8 slices Cheddar cheese

DIRECTIONS:
Preheat oven to broil.
In a bowl, mix together tuna, celery, mayonnaise and salt. Spread tuna mixture onto the toasted muffin halves and place them on a baking sheet. Top each half with a slice of tomato and a slice of cheese.
Broil until cheese is melted, about 3 to 5 minutes.

You've got to start with a great canned tuna. Tombo tuna from Italy, packed in olive oil, is the BEST. Mix this with cornichons, (little pickles), lemon aioli, (a lemon and garlic flavored mayonnaise), and then place on lightly toast foccacia bread. Add cheddar cheese and some greens. Enjoy!

Make your tuna salad with onion and celery chopped fine and add enough mayo to bind together. Put on a slice of Oat Bran or Oat Nut bread with a slice of American cheese. (Food Lion brand taastes the best) Spread both sides of the bread with mayonnaise and fry in a skillet until lightly browned on both sides

The recipes and ideas so far are really good.
Other things to try are;
-use ranch dressing instead of mayo for a really great flavour.
-mix grated cheese in with the tuna mixture before broiling.
-add slivered almonds for texture and crunch.
Ask your friend for the recipe they use.
