"Madison County" Spaghetti Sauce

Ingredients
1/4 c vegetable oil
1 med onion; chopped
1/4 c green bell pepper; chopped
2 cloves garlic; minced
3 Can (12-oz) tomato paste (up to)
7 Can water
1/4 ts dried oregano
1 ts dried basil
1 small bay leaf
1 TB sugar
1 1/2 ts salt
1/4 ts pepper
Instructions
Heat oil in a large pot over medium heat. Saute the onion, green pepper,
and garlic until soft, about 5 minutes. Add the tomato paste and water, and
stir until smooth. Add oregano, basil, bay leaf, sugar, salt and pepper.
Simmer, uncovered for 1-2 hours. Serve over spaghetti.
Variation: For meat sauce, brown 1 pound Italian sausage and 1 pound ground
beef, and add with the spices.

Nicks Spaghetti Sauce

1/4 c Olive oil
1 med Yellow onion; chopped fine
2 cloves garlic; Cut off ends and Leave whole
2 Jars "Hunts Brand" Spagetti Sause W/Meat
1 Jars "Hunts Brand" Spagetti Sause W/Mushrooms
1/4 ts dried oregano
1 ts dried basil
2 small bay leaf
1 TB sugar aprox to taste
1 1/2 ts salt aprox to taste
1 Pkg Mushrooms or a small can of mushrooms stems and pieces
* wine if desired I use Chella Lambrusco Just a splash.
Instructions
Heat oil in a large pot over medium heat.Brown 1 pound Italian sausage
( Recomend "Jimmy Dean Brand Hot Sausage" )
and 1 pound ground beef,
then add and Saute the onion, and Mushrooms Together with the Meats until onions are translucent soft and the Mushrooms have given up most of thier moisture, about 5 minutes.
Add the Canned Spagetti Sauce with 1/2 cup water, and stir until smooth. Add oregano, basil, bay leaf, sugar, salt and * wine if desired Recomend "Chella Lambrusco" Just a splash.
Simmer, covered on low low heat and stir with a wooden spoon make sure it doesnt burn on the bottom of pan simmer for several hours keep adding watter and let cook down to desired sause thickness. Serve over spaghetti.
* You Can Choose to substitute Pork Chops Bone attatched for the Sausage and Ground Beef, Just Brown it in the Olive Oil first and simmer in The Sauce on low low heat for about 1-2 Hours Till Meat is tender and ready to fall off the bone

1/2 cup extra-virgin olive oil
2 small onions, finely chopped or 1 teaspoon of dried onion
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
8 Medium Sized Tomatoes, chopped or pureed, pick your consistency
1 teaspoon of fresh Basil
1/2 teaspoon oregano
1/2 cup of chopped mushroom
1/2 cup of chopped red pepper
In a pan, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Transfer carefully to a stock pot, add the tomatoes and basil, and simmer uncovered over low heat until the sauce thickens, about 1 hour.
If you want you can turn up the heat, but you are going to have stay and watch, stirring the sauce often.

I used to use my mother's recipe, but recently, I discovered a tastier easier recipe. It's.....1 jar of Paul Newman's marinara sauce
a can of regular tomato sauce
fresh garlic.....a few cloves ...chopped
basil
oregano
tablespoon of sugar
hot italian sausage
ground round for meat sause or meatballs
saute the sausage
place in large pot with other ingredients
then, make your meat balls or brown the ground round and put in sauce.
Cook on low for about an hour.
Cook pasta and put sauce over pasta.
