Arroz con pollo
Chicken, rice, veggies, chicken broth, saffron
This dinner is easy, quick and healthy!
Here is my quick recipe:
Saute carrots, red peppers, green peppers, onion and any other veggie that takes awhile to cook. Spice with salt and pepper, cumin and a bit of chili powder.
Remove from pan. Add chicken and cook in the same way.
Add veggies back to the pan. Add 1 to 1 1/2 cups of rice and cook until translucent.
Add about 2.5 cups of water+broth+white wine
Add a can of stewed tomatoes (14.5)
Check spices (s+p, cumin etc.)
Cover and simmer until you have the consistency you like and until the rice is cooked. This takes about 20 minutes. Add some zucchini or broccoli towards the end of the cooking so that it is too soft.
Serve with corn tortillas and some salsa if you wish.
Enjoy! Total time about 30 minutes.

We had baked steak with mushroom gravy. Mashed potatoes with gravy from the steak, fresh green beans with new potatoes, warm rolls with butter and honey. Sweet tea over ice.

Baked Steak

Dredge cube steak in seasoned flour. Brown in pan with vegetable oil until brown on both sides. Remove from pan.

Pour excess oil out of skillet. Add 2 cans of cream of mushroom soup. Stir to deglaze the pan. Add two cans of water to the pan and stir until smooth.

Put your steak into a baking dish. Add some chopped onions and sprinkle about 2 tablespoons of the seasoned flour over your steak. Pour the mushroom soup over the steak and bake for 1 1/2 hours.

Grilled up a couple steaks had some roasted potatoes and macaroni salad!Cheated with roasted potatoes came in a bag the salad I made at lunch didn't take long at all.As for the steak depends on how you likem on how fast the cook!
You could always do a stir fry, one pan needed cook meat then throw your fav veggies in and don't for get your fav. seasonings I usually put teryaki and honey garlic in mine!Good luck and enjoy!

I had a sausage sandwich x2 (both with ketchup and one with cheese) lazy I know but I really couldn't be bothered.
A good meal on Sunday is boiled potatoes, some veg (garden peas or carrots with cabbage and a meat or fish fillet, don't forget some sauce, gravy or mint. try bbc.co.uk for recipes.x

We were busy restyling the kitchen and didn't realise how late is was so we had take away.....I had vegetarian calzone smothered in garlic, and his nibs had some sort of a burger!
